    The purple wildflowers are called "cornflowers", "bachelors buttons", and "centaurea". Yep...three names for the same beautiful flower.

    Lol. Piglets are adorable!!! How about Curley, Mo & Larry?? Or Rosemary, Parsley & Thyme??? Hahahaha, so much life and excitement being added with each passing day!! Kudos on the success so far on the re-wilding project!!! You guys should be proud of your accomplishments thus far!
    In the early Fall, before the weather starts to turn too much, would just love another stroll through the gardens with Luke's mom the Countess. Just take the pressure off by telling her to treat the guide like a song. Where when you don't know the words, you just hum. So if she can't remember a plant, we will hum along with her lol. I just find her a delight!

    What are the new piglets' names? Parsley, Rosemary, and Thyme? Then you will have parsley, sage, rosemary & thyme - and onion. Perfect combo for stuffing a Thanksgiving turkey. (No, the herbs & onion, not the babies!) Or perfect for the Simon & Garfunkel song....

    I love it that Mrs. Piggy came to you without any fear to get a friendly scratch! Happy cows! You have a lot of fields. Do people in England buy Christmas trees? Does Devon have a good climate for growing Christmas trees. I think your fields need to be making money. Could you rent them out to local farmers? Or local cattle farmers? What about the soil itself? Is it rich and healthy? Could you sell Mapperton Garden Soil? and Mapperton organic fertilizer from Mapperton cows? Could you sell Mapperton hay to the Royal Stables? I have no idea how to do any of those things. Just throwing ideas around. And did I suggest appiary? Beehives all around that wildflower meadow for Mapperton honey and whiskey!

    I grew black currants because there was a trend that they had a lot of antioxidants. I ordered them from Canada, but I later learned that they harbor white pine blister rust. White pines are not native here, but my ex happened to have planted one right in our front yard. I did get enough for a few years to make jams, but the bushes petered out. I began cheating with bottled black currant juice cocktail from the store, then I went on to other fruits. Making jams and jellies and getting them right has been a journey. The more you make them, the better sense you get when "it's ready" (to jar). Btw, the white pine survived, no sign of blister rust whatsoever.

    Oh I’d love to see more videos of the walled garden! I follow Spencer 1508 and they’re restoring their great, huge walled gardens. The history of walled gardens are fascinating and so compatible with regenerative farming etc!

    Raspberry are in season in my yard and have made jam already, without the seeds. That’s the bad part about doing those berries as you have to push out the seeds before anything else is addded. Got six jars so far. More to come.

    Learning botany is so edifying! I’m in the process of turning my small (1/4 are) lot into a pollinator-friendly space. I’m also planning to replace many plants and shrubs with edibles.

    I feel like 200kg of berries to make jelly, is a measurement they may have done back in the old days of the Earl of Sandwich. :) I'd imagine there were quite a few jars of that kind of thing made in those days. 😊

    As a self taught canner, yep watch that boiling pot!!! But Julie you are braver then me to wear a light colored top & work with red currants. I have an apron similar to what my Gran wore since I tend to 'wear' my canning tasks 😂. Loved this episode for all the parts, esp seeing how the volunteers are doing transcription. I did video transcription & time markers for our local public tv station when they did various towns with everyday videographers who chose interesting topics or places within the town. I only wish I could win a lottery so I could spend weeks there helping out with tasks. That would be the best vacation!!!

      I learned this trick many years ago to help with boil overs of any liquid you are boiling. Take an entirely metal -dull knife(what we call a “butter knife” as opposed to a sharp Steak knife) or two knives (depending on the size of your cooking pot) and place the knife/knives across the rim of the cooking pot. Some the cross-pot figuration stops the liquid from boiling over. I use this trick with gas stoves, convection stoves and electric stoves as well and it works almost all the time. GOOD LUCK!

    It looked like you have enough currants to make another batch. Yes never ever leave jelly or jam! Life does happen😂 If you decide to print the cookbook I’ll sure buy one.     Our grandmother would give us a cup and spoon to combine sugar with
    Butter an then add currents🎉 yum! But mostly to keep us out of the kitchen!

    Red currants also make a delicious syrup for pancakes and waffles (or even to pour over ice cream). I have not made it but had neighbors growing up who did. My guess is that you just cook the juice down until it is syrupy (of course with sugar).

    UK evolved to cope with large animals, mammoth, bovines and deer with tough holly, yew and hawthorn for example, and thus also hogs and beaver under broadleaf. They'll be great for promoting biodiversity and ecological balance in the long run. Congratulations and hats off to you both.

    This is all so lovely to watch, always....covering lots of areas in the life of Mapperton, but Julie - that was SO funny about your JAM getting stuck, sorry to laugh but you made it so funny, however I hope the jam tasted nice, eventually - thank you and Luke for sharing all your hard work and adventures.

    Julie, that jam dilemma was hilarious but very relatable! At least it didn't burn. I personally have burnt water I left boiling and forgot about. The piglets are adorable and the estate looks lovely!

    You found out the hard way. NEVER LEAVE JUICE AND SUGER BOILING!!! It will boil over. You have to stir it for 8 minutes as it boils. ❤❤ I had to laugh because that happened to me too

      One might think the sugar immediately dissolves but, not until After that 8min of stirring at a Fierce Boil. (Worst part of all) It must be jarred up immediately. My 1st jam was perfect. Then? I didn't"t boil enough. And then, next, I tried less sugar. Wrong, again.

    Oh my goodness, I so want you to offer a writers’ retreat near the rewilding area - kind of a Thoreau and Walden Pond experience for an established writing group. Maybe reach out to a national group and see if they would want to do one one year. It would be a privilege for someone to write in nature. Inspired!

    I just loved that Julie kept her "disaster" with the red berries cooking in the video.(Yes sugar is a very unpredictable asset in home-cooking,I always find it accelerates the process.) That for me lets me know that Julie is not afraid to make a mistake and then own it. She is just a wonderful woman who actually works far too hard I think. Julie you should try to take 3 days off and go to the tent on the grounds (look at a former video about living off grid, great video btw) and just do nothing, get away from it all, meditate and some yoga and zoom out. You look a bit tired and no wonder, you have a lot on your plate at the moment. Thank you btw for another outstanding wonderful video you and your husband made. Loooove ❤the piglets and mama piggy. How wonderful is it to see some animals still having the privilege to be outside in nature. Can't wait to see what is going on with mama Beaver❤You are well on your way to get an Oscar for preserving Nature's Bounty. Well done!!
