When I grow up, have the energy and time, I'm going to get back in the kitchen. So glad I found your channel. You are comforting and inspiring. Thank you
I made the lentil potato “stoup” last night and it was/is delicious. I appreciate that the recipe had regular ingredients already in my cupboards. And, it was the first time I used my IP to its full potential and the first time I felt full since starting my WFPB lifestyle this month. I look forward to purchasing and using your cookbook! Thank you.
I finally got an instant pot! I made this miso butter cauliflower and oh my! It was so delicious and simple. I sprinkled on some tofu chickpea “bacon bits” I had made and it was fantastic. It’s wonderful as is too. I’m enjoying your channel. Keep up the great content. 💓
Hey Anna! That is such a sweet comments! I am quite self-conscious about the way I chop things haha so I really appreciate it! The way I chopped the onion for the soup is definitely the easiest way to dice an onion in my experience :)
Hi Lea! Thank you for the feedback! I’ll definitely have more instant pot recipes coming! I have some more on my blog if you’re interested as well as a playlist here with a few more! www.rainbowplantlife.com/recipes/
Hi there, thanks for watching! Glad you like the video and the ideas! I am always eating leftovers haha, I love having food on hand instead of prepping/cooking every day.
You're veery welcome! I will have more coming in the future :) And yes to curry as well! In the meantime, I have an Instant Pot chana masala and a pumpkin chickpea curry recipe. bit.ly/vegan-pumpkin-chickpea-curry bit.ly/vegan-chana-masala
Great recipe's. I would make them in my slow cooker. I 95% of the time eat whole plants foods, eating 5% vegan junk processed foods. Kale is my favourite green vegetable but I also love sweet potatoes and vegetables in general. My favourite fruit are berries. I can eat nuts and seeds, legumes and beans and grains. Spices and herbs flavour my food.😋😋😋
Thank you, David! Do let me know if you try them in your slow cooker, I am curious to know how they turn out. Kale is also my favorite green veggie! Currently eating a butternut squash lentil soup flavored with lots of spices and it's so warming and delicious!
I love those ideas Nisha! Your videos are always so comforting to watch and the recipes definitely look yummy. I can't wait to try the mashed potato alternative and oats recipe. As for the lentils, I'm going to upgrade my routine lentils soup! I can't wait. Thank you for sharing.♥️🤗😊
Hello I just subscribed. Can you imagine I have my Instant Pot on my kitchen counter for almost 2 years just because I feel so intimidated by it. I am going to make this lentil potato stew. It look delicious. Thanks for sharing you gift with us because I want to go plant based.
Hi Dale, so wonderful to hear you are feeling inspired to start using that instant pot :) I hope this video and my other videos (or my instant pot cookbook) will help you get creative with your instant pot!
I get so excited when I get your video notifications!! Thank you for a beautiful video and these yummy instant pot recipes, going to try this pear date oatmeal for breakfast next week. I recently tried steel cut oats and wow, so much better than regular oats!
Aww I appreciate your support, Nedina! Thank you so much :) I love that oatmeal recipe, it's a new favorite staple in our household, we've been making it for the last several weeks on repeat.
I am always putting your videos onto Facebook......down home veggie recipes...... I make veggie egg rolls and fry them in my air fryer and serve with a Panera copy peanut sauce....sooo good
Beautiful recipes! I love all that share, so hard to choose what to see more of. Make ahead lunch meals would be great. Thanks Nisha!💗 Also love when you share your fave food hauls.
Hi Nisha, im such a huge fan. You have changed my whole way of eating 🥰. Can you recommend how I could make the pear dish with a wheat free grain? I'm not sure what would work and more so how to adjust cook times. Im still learning how to use my insta pot.
Hi Liliana! Thank you dear! Many more instant pot recipes coming soon :) and I have some more on my blog if you’re interested :) www.rainbowplantlife.com/instant-pot-recipes

Big fan of your youtube channel... bought your cookbook to support you, even though I don't usually follow recipes (use youtube videos as inspiration). I am just starting my vegan journey... Any other youtubers or vegan cookbooks you'd recommend with easy plant-forward recipes?
These all look so great. Can you substitute apples for the pears in the oatmeal ? Also a substitute idea for vegan butter in the cauliflower mash ? Love your videos.
hello...i stumble across your video and so happy i did, I see you're using the same pot i have lol nice even if it's the older model. your recipes are very simple to follow love how you did step by step. presentations are yummmy looking. i will subscribe hope to see more IP videos from you. Healthy New Year to you and all your love ones!!!!!
Hi Mary Lou! So happy you found my channel and welcome :) Thank you for your thoughtful comment. I love using my instant pot and will definitely have more recipes and videos. I have some more on my channel if you want to take a look. ruclips.net/video/gpUFt5U7k_8/видео.html
Hi Nisha! Just got an instant pot and I’m waiting on your cookbook in the mail. Super excited! I tried the oats as you make them here but with apples and they completely dissolved into the oatmeal. Is there a rule against apples in pressure cooking and that’s why you used pears or did i do something wrong? Lol
Hi Anthony! Yay, that makes me happy to hear! Ha there's no rule against apples - it would depend on how small you cut them and the variety (I believe a firm variety like Fuji would hold up better than say Red Delicious). But in general, the 12 minute cook time is going to soften the fruit up quite a bit so it almost melts into the oatmeal and naturally sweetens it...so you probably didn't do anything wrong!
Gonna try these asap! Thank you so much! But... Why the abrupt ending? It didn't have the typical end of video wrap up clip. It just ended. thought that it seemed strange.
Nice video. May I ask why you are using oils spray or olive oil in some of these. The whole oil thing appears to be a big no no for a lot of WFPB eating so wanted to get your take on it.
Hi Randall, I try to share meals that are accessible, easy to make, and delicious and that will appeal to both vegans and non vegans alike. I do use some oil in my cooking, though I try to be mindful of how much. Oil is often very useful and sometimes necessary to achieve the right texture and taste (I.e., browning or caramelizing veggies), and I pride myself on making delicious food above anything else. I am vegan for ethical and environmental reasons, and while the health reasons are certainly important, they are secondary to the ones I mentioned above. I certainly believe that eating a diet rich in fruits, vegetables whole-grains, legumes etc. is the best diet, but I am not someone who strictly adheres to a whole food plant-based diet (I love dessert too much haha). I totally understand that some people who follow a whole food plant-based diet avoid oil and I respect that. I do have some oil free recipes and will be sharing more this year. I also know that a lot of people have adapted my recipes to be oil free, either using water or vegetable broth. Hope that helps!
FINALLY, somebody is appealing to my great home cook senses. I think was depressed because wanted to be vegan but was eating nasty tasteless food. Thank goodness found your delectable channel. Also, you deserve more subscribers, going to share this channel with family members.
Aww thank you so much! I am definitely not into eating bland, boring food lol. I am all about the flavor - I think that's one of the keys to getting non-vegans to become interested in vegan food :) Thank you for sharing my channel!
Hey, im really considering buying an instant pot, but I feel like I really cant justify it when I have an oven (with stovetop). Do you feel like there is a difference? And also, when im making stews with lentils I always have to stir in between because the lentils sink down and get stuck in the bottom. How is that avoided in the instantpot?
Instant pot said “burn” before it started counting down even though I did everything you said. I thought 1 1/2 cups of lentils with only 3 cups of water sounded wrong ☹️ should have been 4 cups of broth and only 1 cup of lentils and it would have worked ☹️
Hi Angela, yes very delicious indeed 😋 I think we all have different definitions of what is “healthy” but it is a side dish, so it’s not the bulk of what you’d eat for a meal. You can always use less oil or butter than called for in a recipe :)
I'm disappointed in the recipe since you add oil I can't have oil because of heart disease. And I try and follow vegan recipes which is what's in his title. And I've also watched a couple of your other videos and you continue to add oil even though you call them vegan
Oils are derived from plants, seeds, and nuts and are therefore vegan! They might not be the the best ingredient for heart disease but they are vegan. I use oil where necessary to achieve a certain texture, unlock certain flavor compounds during cooking, or where needed to prevent sticking such as in the instant pot. My most important criteria in my recipes is making them taste good so they will appeal to a wide group of people. If you are interested in oil free recipes, I’d suggest searching for oil free vegan recipes and/or whole food plant based recipes.
Oil is vegan. If you're on an oil free diet all you have to do is use water instead of the oil. You would need to keep an eye on it through as water can dry out when you're sautéing onions etc and then tip a little more water as required. Using oil is by far more flavourful though.
When I grow up, have the energy and time, I'm going to get back in the kitchen. So glad I found your channel. You are comforting and inspiring. Thank you
You are too kind, Jacqueline! Thank you. I hope you will enjoy these recipes when you're back in the kitchen.

You have the most clever ways of cutting veggies! Such a random thing to notice, but I’m definitely going to copy how you chop carrots and onions. :)
Hey Anna! That is such a sweet comments! I am quite self-conscious about the way I chop things haha so I really appreciate it! The way I chopped the onion for the soup is definitely the easiest way to dice an onion in my experience :)

Love your videos.
Yes, you can definitely use apples instead. Can you have olive oil? If so, that's a good substitute. If not, maybe some tahini for richness :)
4:52 and the last step is too add some acid ✨😻🌈 That’ll certainly wake up some flavors that might otherwise lie dormant 😜
Haha 🤣 not that kind of acid!
Hey, it cut off before you got a chance to garnish the oats... (or taste anything) my favorite parts 😋
She really needs to make guided meditations!!!! That voice ❤️
YUMMY! I'M SO TRYING THAT OATMEAL!! WHAT WERE THE SPICES YOU USED? I HEARD CINNAMON, CARDAMOM, AND WHAT ELSE?
Love these recipes! Thanks for sharing. Happened to notice yellow shirt in between several times ... 6:38

Are you using a 6 or 8 quart pot? I have a mini and I'm trying to correctly reduce the recipe.
Instant pot said “burn” before it started counting down even though I did everything you said. I thought 1 1/2 cups of lentils with only 3 cups of water sounded wrong ☹️ should have been 4 cups of broth and only 1 cup of lentils and it would have worked ☹️
How do you clean the silicone liner of the IP? I have tried vinegar, baking soda etc but it still has the lingering smell of daal/lentil. 😅
The French lentils look awesome but what happened to the french thing you tied up and put in?
rickt1951 I just discard the bundle of herbs after pressure cooking. It infuses the whole soup with herb flavor while pressure cooking :)
Do we really have to peel garlic? I've stopped peeling and dont notice the skin
You are beautiful inside and outside
so very kind of you to say :) I am blushing 😊
She is! So much so!
Although I do have t veganize it. V I do not do theory of any kind
Baby potatoes are ridiculously expensive and it’s hard to find organic ones, better off using one large russet
Yes looks delicious but.....that’s a high fat dish with the vegan butter and oil for sautéing. It will taste great for sure but not a health dish.
Hi Angela, yes very delicious indeed 😋 I think we all have different definitions of what is “healthy” but it is a side dish, so it’s not the bulk of what you’d eat for a meal. You can always use less oil or butter than called for in a recipe :)
Nothing's wrong with fat!
I always sauteed in water
I'm disappointed in the recipe since you add oil I can't have oil because of heart disease. And I try and follow vegan recipes which is what's in his title. And I've also watched a couple of your other videos and you continue to add oil even though you call them vegan
