    Love chicken, love the seasoned skin and I see you're a man of culture as well: thigh meat is the best (but my favorite piece is always the flat, two boned, part of the wing 😊)

    I appreciate your content! I bought the Malory M1 based on your recommendation. It's fantastic!! How do you get such great heat control on your kettle?

      The Malory Firewall also helps, but really it’s just trial and error getting used to the conditions and your kettle.

    Did you put the chicken in a bag? Then put it in the refrigerator overnight. Or did you leave it uncovered?
