  • We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.

    [Ingredients] 2 servings
    2 chicken thighs with bone
    1 new onion
    1 large tomato
    Wine vinegar 70cc
    Water 100cc
    Salt and pepper
    Unsalted butter 30g
    [Preparation]
    ・ Season the chicken with salt and pepper.
    ・ Slice the onion into thin slices.
    ・ Cut the tomatoes roughly.
    【Procedure】
    1. Heat a frying pan and saute the chicken, skin-side down.
    2. Add onions, tomatoes, wine vinegar and water, cover and simmer.
    3. Add butter to finish.
