The Rishi Masala chai is delicious. I've been simmering a half cup of milk with half cup of water, then steep the leaves in the liquid for 4-5 minutes. Add honey and it's great!

I’ve only drink iced chai lattes but, this fall and winter, I will try them hot. 😅
I have a couple questions
1) How long will the homemade concentrate last in the fridge?
2) Why do you cover your steeping tea?
The concentrate should last about a week in the fridge. I personally keep it longer than that, but the FDA recommends that leftover food only be kept for about 5 days in the fridge.
I cover the tea when steeping to trap the heat. This is most necessary when making the single serving because you use less water than you normally would when brewing tea, so it cools off faster.
This was super helpful! Two questions: how much of a difference would it make if I nixed the heavy whipping cream? Also, would I have to use maple syrup as a sweetener, or could I use something like honey or brown sugar?
So glad it was helpful! Not using cream will simply make your drink less rich, which some people prefer! And you can definitely use a different sweetener. With the brown sugar, just make sure it dissolves well!

Where do you buy the Rishi tea bags?
I think I found these either at Walmart or a local health food store. But I think I have them linked in the description or in the blog post!
Chai is the Hindi word for tea. I buy Indian tea and make it the way the Hindi people do by heating up whole milk adding tea, 2 pepper corns, 2 cloves, 1 cinnamon stick, star anis ,3 cardamon pods put all the spices in a mortar and break up with the pestle. Put a cup of milk in a pot put in all of the spices. and 2 t of loose leaf tea and as much sugar as you prefer. Bring the milk to a boil and then lower the heat simmering the mixture for 5 min. Turn of the flame and use a strainer pouring the mixture through the strainer into your cup. It is so satisfying.
The difference between the Rishi liquid chai and tea bags are the missing added lemon juice and molasses.
Why whole milk? Why not something healthy like almond milk?
I think health is kind of a matter of opinion. I think that whole milk from grass-fed cows that's been minimally process is healthy!
I bought this from Target thinking it would be desi masala chai but it ended up being White people's masa chai.

I believe that full fat dairy is healthy when you purchase high quality. I use organic and/or grass-fed the majority of the time.
