Today I am visiting the luxury hotel Cuesta Serena Boutique Hotel in Huaraz, Peru. The chef Jhon shows how to make the best ceviche ever. Ceviche is prepared differently depending on which area you are in, this is the classic way ceviche is prepared in the andes of Peru.

First time I had Seviche was in California and it was made by a man from , I can remember Starts with an H. We were station in California in the military. Oh course in the military service everybody is Brothers. We all participated in making a dish. He made seviche with ffish. Snd just now a person brought us Seviche made with scrimp. Never had it that way. Must be a new version ( or I’m just so far behind the times) it was good tasting. All cut up condiments and served with chips, now I’m wondering what my grandson will say when he gets served this Variation of seviche. He has never tasted it before. He never complains anout my cooking as he grew up with it. That dish prepared looks just wonderful and I will try and make it. Thanks so much. Yes I would like to visit Spain the birthplace of my great grandparents. The UFO are here why go to outer space.
I have seen 3 how to make peruvian ceviche videos and ALL of them the hosts look like they are about to smash. I guess ceviche has magical powers as they say.

feels like some details are skipped. not filmed or mentioned. the sauce had a liquid in it, where did the liquid come from. about the point where they mention the limes. you never see then squeeze lime juice into the sauce bowl and they don't actually say "squeeze lime into the sauce bowl". In fact I see the chef cut the limes and place the halves in a separate bowl.
Does anyone have the full recipe some ingredients she missed mentioning

Good episode, just a small piece of advise, just stay away from the chef please, let him do his job, you are distracting him and us, remember the show is about the dish and chef, but thank you for an awesome episode, this guy is real good.

I watched already couple ceviche recipes but thisone looks really good. I am still not sure what kind of fish to use.. is it always river fish or any particular? thanks
This one was truly amazing! Best ceviche I ate in South America. You can use any fish, here we use the river fish because it was local and therefore fresh for this area. As long as you use a fresh fish it's OK. They do differ a bit in the consistency but the way to find it which one you like the most is by trying. Good luck!!
They typically use halibut or even tilapia
You can use any fish. It will very by region. But a good rule of thumb. Look for a firm, white, flaky fish. Trial and error. Good luck and good eats!

@@adonaim58355 I would not want to eat at any place the Chef spits in the food or uses 1 spoon to keep tasting things without washing it. You can use a spoon to pour into a tasting bowl or taste & put the spoon it the wash. This is a lazy careless act & would get you fired from any good kitchen. Anyone that can't see this should not be near a kitchen that serves the public. What next scratching your balls while making bread?

Yours is not ceviche, it is fish salad; 80% vegetables, 20% fish. In ceviche the fish is king, just like in Peru.
