When beans are cooked in hard water the magnesium and calcium bond with the cell walls. This hardens the beans and dramatically increases the cooking time. New Hampshire water is considered soft.

Thank you for the information. This makes so much sense, moved to a new area of the country in 2019. Enjoy making 7 bean soup, first winter here made the soup. It was like I hadn't even cooked the beans!
Thanks. Here in the Tampa, FL area, our water is absolutely awful -- hard as nails. And I don't have a water softener. Once a month I have to bust out toilet bowl cleaner and use it to get rid of the calcium and lime around bathroom and kitchen fixtures. I throw a small scoop of Borax into the wash when I do laundry to soften the water.

I love that the community came out to raise money for the meeting house. That's how the country should work. Come together and take care of our own without government intervention (aka getting their hands on tax dollars)! Kudos to them!

We toured all of the New England states this past week…and wow! So much to see! New Hampshire was my favorite. Oh! The colors, the views! 😍 We clicked “avoid highways” on the GPS and began our journey. It was a dream come true. From what I understand, it will get even more beautiful in a week or so. I can’t even imagine!

My mom used to make beans using the ingredients that you are using . She soaked them overnight, mixed ‘em all up, baked them and they were delicious. Good for you for using the old ways. Hope your family loves them as much as we did! Miss those days.

Hi Linda. I think the reason that you want to cook legumes with soft water is that hard water contains things like calcium and magnesium, and they tend to make the shell of legumes or beans unable to soften and cook well. I have no idea if my water is hard or soft, but I’ve cooked beans before and they turned out just fine! Thank you so much for this nice recipe…it reminded me of how really easy it is to cook beans, and how once you have homemade beans, you really don’t want to eat canned beans anymore! My hubby and I took a ride today, through Dublin, Hancock, and Peterborough and we are just so happy to see all of the beautiful, red, orange and yellow foliage. I always tell him that we don’t have to go leaf peeping because we live right in leaf peeping land! Thank you again for another great video and looking forward to next Sunday, of course. 🍁🍂🍁🍂🍁

Ahh the memories! I’m a Vermonter and my mother used maple syrup in her baked beans . A pot of baked beans in the oven and fresh bread rising on the cast-iron heat radiators every Saturday …delicious smells! I’m 87 years old so it’s been a long time. Thanks for bringing those memories back.
I am going to try maple syrup one time soon! I am looking forward to comparing the taste difference, if any.
I grew up in PA and so did my mom
I have one of those bean pots, Linda, and made Boston Bakes Beans for my 84 year old parents twice this Summer. I had bought some pulled pork from a Mennonite butcher shop so thought they would be perfect with the pork....and they were! I so enjoy using this old school, clay pot and cannot wait to make them again this winter in my wood cook stove. Thank you for showing us your new purchases and really enjoyed taking us along on your excursions!

Baked Beans! Definitely New England. More Years ago than I care to remember I was actually a little girl. My mother would by a yellow box that had the dried beans and spices all together in the box. They were the best! As to hard and soft water: We also lived in a house with a well. the best way I can Identify hard water is it seems to take more soap to get clean! I was taught to add a teaspoon of baking soda to the water when soaking the beans. We’re on a well so we have hard water and a whole house water softener system to cut down on mineral buildup on our fixtures and pipes. I thrifted a large bean pot a few days ago to add to the medium and small pots I have from my parents. TYFS🐦⬛

Memories making homemade baked beans! I always used a bit more molasses than called for cuz I love it ! In a real bean pot as well, 48 years ago!
I like mine sweeter too. I was thinking today I should modify my mom's recipe and add a tablespoon more or so of molasses.

I agree...and to say "easily distracted" as Linda describes herself, well it's really that she is very sensorially aware of her environment and sensitive to all around her. It can be challenging at times, I understand, but this is what makes her so fantastic!!!
Our hummers left on Sept 20 but we keep our feeders up to help the stragglers. Time to make bake beans with the cooler temps. Enjoyed.

I’m certainly enjoying the items I’m receiving from your online shop. Fixed my husband the apple cider pancakes with the maple syrup for breakfast this morning. He loves the apple cider doughnuts so I knew he’d love the pancakes as well. Leftovers went into the freezer for another day.

My recipe for baked beans is exactly the same as your mom's. They are delicious. I make them once a year, usually around Easter. Baked in the exact same pot as the bigger one that you have which is a family heirloom. It will eventually be passed down to my daughter. Happy October !

I made real baked beans for a July 4th meal once, but I made a Tex-Mex version with wet ingredients. I was wondering what you were going to do with the onion and when you opened it up on the top, it was beautiful! I was gifted a variety of dry beans and I think I may try your recipe this fall. Even though I have a dehydrator, I dry my herbs on a folding laundry rack. I hang the bundles with twist ties. It works great! I will be trying dried oranges in the dehydrator for the holidays, though.
Love that. Most are hanging in our butler pantry, and I have other herbs on our drying rack, on the porch. I wanted these done in a day so that I could jar them with the others and enjoy sooner than later.
I love Boston baked beans but I have never made them the correct way from scratch! You are an inspiration and next time I will give that a try!

Hard water has natural minerals in it that can leave a more bitter after taste. Soft water means you have a softener system attached to your water system and use bags of filtering granules that contain salt. So, you might need to use seasoning or brown sugar for beans in hard water to improve taste, while with soft water, you would lessen any salt used in recipe. The baking times can differ, as well.
Soft water would be used to reduce the gassyness later. Very smart idea, to use baking soda while soaking your dry legumes.

Hello Linda I heard some day that the soft water will make de beans softer and with the hard water they will be more hard. It is because of the minerals in the water. I do my bean in the slow cooker and they are delicious! Have a great day!

Good Morning Sweet Linda!! Ahhhh.....I can smell your beautiful Autumn season from here in GA. I am originally from Okla, Baked beans, were made with "Pinto" beans but everything else was pretty much the same as your Boston version...except no onions! We only served them in the summer with all the barbecues goin on. Your towns "Meeting House" was beauatiful! Didn't you have something in the past about that place and you went up in the attic?? Maybe just me 😊As always, ❤from GA!

It’s not just a New England thing,,my Mom made them the same,except she used a black iron Dutch oven ,same one she cooked the beans ,and just added everything else she did add a bullion cube in the middle of the onion,thanks for a wonderful memory.oh and I believe she used cranberry beans most of the time ..I am going to try these .We live in the mountains of upper East Tennessee, ,she was an excellent cook 🍁🍂
When I say that, it will usually means it originated here, or a particular version of, like this recipe. ;-). For sure they are made everywhere now. Boston Baked beans have history back to the Massachusetts Bay Colony modified from England.
This is the first time I've heard of cranberry beans. I'm going to give them a try, thank you for the information.

You would know if you had hard water because all your taps would cake up with minerals and boiling water would have a scummy foam on top.

Another way to tell if you have hard water is that it’s nearly impossible to get the laundry detergent completely rinsed in a load. Our water is hard so I have to use a smaller amount of detergent to create the perfect balance of suds and complete rinsing.

Happy Sunday! Linda. Yes! I have been picking my maple leaves and will start making my garland. Could you please show if the leaves are placed marking it look circular around or do I just put them on in a straight straight. What is the best way to dry out herb and flowers the old fashion way. Please send out some advice on a video.
Last year I had Peppermint planted in a pot out the back door by the herb garden....it survived the winter in that pot! Grew like crazy this year. Maybe you should try leaving some mint out and see how it does.

Might depend what sort of vinegar you use…as there are many different sorts…and often with sweetness you need the balance with sour .

Hi, yes as a neurodivergent person, HSP is I believe pretty common. I always felt it was making up for the other learning disability issues. LOL

I discovered you a few months ago while searching for Butler's Pantry ideas. I found the episode where you were winding the clock first then I binged watched! I'm hooked; I subscribed! I can't wait to try the bean recipe. I just ordered a stoneware bean pot. What temperature did you bake them for 5-6 hours? I have a convection oven and it cooks rather fast. I love seeing your beautiful girl Willow! Thank you for including her in your videos. We have two little girls, Minnie Mouse and Merry Anna, who are our kids. My husband and I love seeing your gardens. We both grew up on dirt roads in Western New York...we know about dust. But now we live in Arizona and trust me, it's worse! Great videos! It is interesting you use bacon rather than salt pork as my Canadian Mother-in Law used to do. Hers were the very first homemade baked beans I ever tasted. They were fabulous with baked fresh bread and her homemade coleslaw 😊!
Usually do use salt pork. I didn't have any. It is so good with bacon too. I've done both.
Hi Linda, I love your videos. New to them. Love the bean pots. Purchased one and have yet to do the Boston baked beans. However, I noticed you preheated your oven first. Have read up on the bean pots. It stated don’t preheat oven before you put bean pot in. Put in then preheat. Just wanted to let you know the information I read.
