Love the tutorial! but I was just speculating. Couldn't you just use a displace modifier and work on the photo itself my making a black and white displacement mask ? It wouldn't be that clean but much much faster

I didn't say it but you need to be in orthographic view (front or top), otherwise it will not work

There are TOOO MANY tutorials that REQUIRE addons that aren't enabled by default. Blender should really do something about that.
