Just my 2 cents worth its very hard to find a manager that will instruct your workers in the Philippines as most people here are non confrontational and it is against there nature to tell some one to do their job correctly putting Kat in that position will stress her out and also harm your relationship with her hire a manager to handle your crew and let Kat be your eyes on the business I have over 35 workers and several lead people and still I need to keep a watch them daily to keep everyone working together just my advise good luck and I hope for your success / Tom

Not enough foreigners here in Roxas to keep a steady stream of big-spending customers so he is reliant on locals to come and spend and that's gonna be difficult. 13th month is not a concern until December but, you're right, a LOT of employees creates a big salary bill when that time comes. I hope he can make it work and it becomes a viable and sustainable enterprise.
I was brought up in hotels and also worked as manager and licensee in numerous establishments. Staffing will and always be a problem also even when you go away you will never be able to fully relax, something always pops up plus it’s very hard on relationships. Hopefully it works out and it doesn’t turn out to be a stressful experience.

Handling kitchen staff is the hardest part. I ran a pub for 12 years and handling kitchen staff is the worst part. It’s not their fault, just something happens behind those walls and makes them very hard to work with. You need to be very tough on them for it to work. You cannot let them control any situation, it’s for their own benefit. Bar staff is way easier to handle.
Thats because kitchen staff makes less money and works way harder in most cases not all. There's also not much pressure for bar tenders pouring drinking but definitely pressure for wait times on food
30 years as a hotelier, stiudied my trade for 6 years both in Seychelles and Ireland. I can assure you that it was not an easy career managing people people in the hospitality industry. I worked for resorts, business hotels, B&B, Restaurants, 5 star hotels, Yes kitchen staff are the one that I had faced the most difficulty with, I cannot remember how many times I have to put on my Jackets to get things moving. Now I have retired but I missed it, it is in my DNA.
A piece of advice to Mike so that just like other expats you maybe avoid a more stormy sotuations just like many expats that has gone through , financilly broke , emotionally distress . You already knew the situation on the status of Kat a single mom with a kid and her family situations msybe. The cultures of Filipino on helping one another especially the close family members in times of needs maybe her dreams,plans and dreams. For Kat as a Filipina maybe for you to have a great relationships to last long you need to understand more the cultures of western people that after their legal age they are no longer dependent on their parents and relatives even financially. They are on their own and not bothered or oblige financially by any of their family members to help them. This is a great culture clash of Filipino vs the west and maybe you can educate your Filipino family on these matter. This is just a friendly advice.

As a bar owner/operator in Cebu, just keep your posted hours. Don't try to adjust to accommodate the crowd, because their mind always changes. Set you hours and don't deviate.
@@DJC1916 normally it would be a compliment. But in this exact instamce... it is not;) The Philippines are dirt poor, because thry never understand entrepreneaurship and adapting to customer needs. Never understand how to increase efficiency and higher output. Increase profits longterm etc. Even extremly highlabour costs like EU are able to outcomprte the philippine productprices... in philippines. Its realy really messed up. And it comes as a sideffect of the laidback attitudes of "if it works now, then never improve it" (btw that is one of the big reasons how small shops get into bankrupticies, while chains grow). Philippine is not customer or serviceminded. Letting people waste time in long queues and geaucrazy and ineffiviencies is a "pandemic" in the ph. A great shop would adapt, and see oppurtunities to then "steal" your customers ;) It is sad to see how much wasted unused potemtial in the ph.

My children grew up in my restaurant in remote area, similar situation to yours, it was great for their growing up, mixing with customers and staff, learning so much. it's helped them become very outward going and confident. They're in their late twenties, both extremely successful and happy.. Lara will truly benefit even though your life will feel so tiring and challenging.

Managing the kitchen section/staff especially Chef is one of if not the most difficult part of the hospitality business. Chefs’ job is very often pressurise and stressful and they can be prima donnas at times. Unless the owner himself/herself is a working chef (or not) and passionate about food and cooking and can talk ‘food’, the employee Chef will eventually thinks he/she rules! I know my husband is a Chef! 😊They can have an attitude of ‘who do you think you are telling me what to do? Are you a chef?’ 😊😊 especially if they are passionate about food and cooking! Is the security guard a permanent fixture? I hope business picks up. I really hope the bar doesn't become too much of a burden. It sounds like it is very stressful and time consuming.
Its legal to put cameras, they have cameras everywhere in the workplaces where ive worked . Specially where the cashiers are. The only place without it are the wash/bathrooms. You need to know what your staff are doing when youre not looking or when you are away. Its human nature that the mice play when the cat is away.
He has CCTV, you can see it in alot of the videos, not to mention he has spoke on having CCTV multiple times, including already using it to show police footage of an unruly person at the Beaver.

KAT, you obviously are doing a phenomenal job! For someone who has never done what you are doing, and Michael to be so calm and collected, just shows how good you are handling things. Most would start out at a quiet resto/bar. You however connected with a popular RUclipsr and apparently a very likable person. So, you got thrusted into a position that is fast tracked. Don't give up, and don't let it overwhelm you. You have this, and you are/will be great! It will get easier as you learn the business more, and the employees understand your expectations. Running a restaurant is the hardest thing I have ever done. Bar is way easier IMO. Food just takes so many things to do right.

KAT, you obviously are doing a phenomenal job! For someone who has never done what you are doing, and Michael to be so calm and collected, just shows how good you are handling things. Most would start out at a quiet resto/bar. You however connected with a popular RUclipsr and apparently a very likable person. So, you got thrusted into a position that is fast tracked. Don't give up, and don't let it overwhelm you. You have this, and you are/will be great! It will get easier as you learn the business more, and the employees understand your expectations. Michael, I cannot express how much I, and I am sure many others, appreciate that you give credit to others. It's a sign of great leadership.
