I realy like that you use sour cream. Most corn casserole dishes are prepared with cream cheese which can be hard on a stomach . A couple of us can not eat cream cheese because of the discomfort it causes and for us sour cream doesn't cause any of those issues. We love corn casserole and I can't wait to try your version of it! My father in law lived to be 94 but he looked like he was in his 60's. I took care of him in hospice care at my home. He had CHF. He ate chilli which he asked for it the day before he passed on. 100 seems old but it really isn't. He had a brain of a 30 year old.

Mine is similar. It's made with creamed corn, regular corn, bacon and chopped onion and chopped green pepper. I stir it together with some pepper and salt and then add 2-4 eggs, beaten. I stir until well mixed then put in a 350 oven for 30 to 40 minutes til eggs are set. I got it from an old 1970s Betty Crocker Cookbook in the 70s. The name is Squaw Corn. That might insult the politically correct but I am definitely NOT Politically correct! I might add chopped sweet (not spicy) red pepper and sour cream next time. I never measure much, I just guestimate. Enjoy!!!🤠🇺🇸♥️🎅
I was born and raised in Omaha, Nebraska. In the 50s and 60s my Mom did all the cooking, but when I was in my teens, I did some, mostly Holidays. I love baking, especially eating the dough. In 2005 my husband and I moved to Fremont, Nebraska where I live now. My husband died last year, so I basically cook for myself and have lots of leftovers.✝️w🇮🇱🇺🇸🤠
On the screen when adding the bacon I posted that I use 1 can whole kernel Corn and the rest us frozen corn that is thawed and drained, but you can use either one.
