Ingredients:
🥛 1 cup warm milk
🍬 1.5 tablespoons granulated sugar
🌾 1 packet instant yeast (10 g)
🍞 4.5 cups flour
🌻 1 cup less two fingers of sunflower oil
🥣 1 cup less two fingers of yogurt
🥚 1 egg
🧂 Salt to taste (I used 1 teaspoon)
Note: Most ingredients should be at room temperature.
For the Topping:
🥚 1 egg yolk
🌿 Black cumin or sesame seeds (optional)
For the Filling:
🧀 7 tablespoons labneh cheese
For the Outer Garnish:
🌿 Half a bunch of finely chopped parsley
🌿 Half a bunch of finely chopped dill
🧀 1 cup shredded mozzarella cheese
Instructions:
In a mixing bowl, combine the milk, sugar, and yeast. Whisk together, then let sit for 5-6 minutes until the yeast activates.
Add the flour, sunflower oil, yogurt, and salt to the bowl. Begin mixing and knead the dough until smooth and elastic.
Cover the bowl with plastic wrap and let the dough rise for 1 hour.
Once the dough has risen, transfer it to a work surface and divide it into walnut-sized balls. Place these on a baking tray, cover with a cloth, and allow to rise for another 15 minutes.
After the second rise, brush the tops with egg yolk.
Preheat the oven to 170°C (340°F) and bake for 15-20 minutes, or until golden.
Once baked, cover the pastries with a cloth and allow them to cool.
Assembling:
Spread the labneh cheese generously on each half of the cooled pastries.
In a separate bowl, mix together the parsley, dill, and mozzarella cheese.
Dip the outer sides of each pastry into the herb-cheese mix to coat them.
