Always prefer someone who does not waste time, is clear about what he / she is saying and does not beat around the bush. In this case a plain and simple "I am not proficient in this topic, but I am willing to learn" is the best answer

Usually people don't apply for roles in which they don't have a practical knowledge base. And if you list skills other than what the role needs be prepared to answer them. You could always say I'm in the learning phase and as my past experience has shown I'm a quick learner and can easily adapt. Give examplws of this. However since it wasn't part of the job role don't be too worried

Faced the same situation once and replied, "Sir, currently I do not know sql but understanding that we are expected to have a good working knowledge of the same, I'm willing to put myself out there and learn it if my work profile requires it." Got the job and appreciation from the interviewer for my honesty. Just avoid a minute long lecture on how you don't know a topic, it can be said in the simplest of words.

Rather since past 1 year I am observing that with such online tack ticks candidates are giving polished interviews but don't have skills for actual role and neither willing to learn further. I like a honest ‘don’t know’ in which case I test them in their expert skill to bring them onboard once they prove to be good enough in what they claimed to be good at, the test will establish a trust that they can pick up a new skill quickly. I don’t need to trust a twisted answer that is neither a yes/no.

As a medical student we always give always honest answers. The professors also know that no one knows everything. So better to say "no" if you don't know the answer. If you try to destract interviewer with wrong or point less answers then your impression will be bad.
Even with this long answer, you can get rejected if their main requirement is that particular skill, organizations prefer someone who already have those skills than someone on whom they have to invest time and money to train them. And if you answer that you are currently learning they will ask the level of knowledge if you are a beginner or intermediate, you will get straightly rejected if you are a beginner, if you answer intermediate they will ask questions and if you fail to answer then reject.
Who are these for? In all of my 10 years of working the interviews has been really casual, they ask about what you know and they then they tell you about what projects and roles you will work on. If you don't know something you just tell them that's something I dont know. It's basic human interaction. What kind of interviews are these where you prepare like it's a school exam? If someone expects me to answer in a paragraph for a simple no, I won't join the company anyway. Can you imagine the briefs you will have to write at work!
In one of the interviews I was hired for, I was asked if I know anything about affiliate writing. I honestly stated that I know about it thereotically but have never written an affiliate content, but I am keen to learn about it. Then they asked what is affiliate marketing, and I gave a proper answer. Similarly, in the previous company I worked for, I was asked if I know how to design Facebook ad campaigns. I politely said I haven't done it practically, but would learn it for sure. So, it's always better to be honest and let the HR know you are an enthusiastic person, eager to learn different things.

Feel free to add "but I could learn" if you want (and if it's the truth), but trying to puff up your lacking skills too much might be seen as a negative. Instead I would simply say sorry I have no knowledge about this topic. It's completely up to the interviewer how he takes it. Why should one assure or tell falana dhimkana haaah! I take interview every other day trust me if you will say NO by giving this much long manipulative answer . You yourself making your loss by time constraints as simple NO can save time and they can move to next question immediately. No one gets rejected by missing one or two questions

I have been to both sides.. but as an interviewer if someone gave me this big answer just to say no.. I am not going to be happy about it. But.. it is not a thumb rule.. depending on career level I may not expect "I do not know" answer to certain questions.

What if they don't ask about the technical skill but questions that are general like what is the currency of this country and stuff? Might sound silly to some that how someone cannot answer this basic question but there are people who have difficulty regarding this ? So how to reply to that....
Ok i was a fresh bds graduate, and i attended an interview for non clinical job, so iykyk they asked me an xyz pharma question and i was like i really dont know this sir, sorry. they proceeded to next question. its about acceptance.

wrong answer actually...I used to hire people as well but it will not workout...should say ' it's an exciting programming language but I didn't got the opportunity to explore' this simple term is enough...thats shows your eagerness to learn something new...
I usually like your content but not this one. You should speak more about your self learning abilities and scaling up quickly if you don’t know something. you can also give a reference of skill you leant in the past and executed in project.
I have been to both sides.. but as an interviewer if someone gave me this big answer just to say no.. I am not going to be happy about it. I am usually ok with candidate saying he/she do not know about something once in an interview. Not more than that. But.. it is not a thumb rule.. depending on career level I may not expect "I do not know" answer to certain questions.

If I’m a technical interviewer, then I would see the candidate’s technical knowledge rather than his ability to speak a long sentence for “don’t know”. It will waste his and my time as I will not accept him as he is not having that technical knowledge which I need to run my project.
I've always answered like I would learn whatever new knowledge in the new position but the feedbacks I received always Not qualified 😅 They need someone knew it already, not someone would learn about it
Instead of all this fake words, you should have to tell that i'm not know much about it, but i'm gathering all that knowledge from online resources if it's necessary 😢
Better say you don't know. Nothing wrong. Interviewer will agree. Only if you beat around bush only interviewer will think that you are all mouth and trying to twist..

These tricks don't work in real interviews. If I am interviewing someone and the candidates says this then I'll ask him again to confirm - So you have not worked with it yet.

No one will be interested to hear this looking story. As an interviewer I would expect the candidate to say yes or no. Giving long answer would give an impression that you are trying to cover up
When in interview giving this much long answers doesn't sound good, saying in my experience.
