    I still don't understand why many people don't like lamb. When it's prepared right, it is so good. My (late) aunt and uncle had sheep on their farm in Alberta. My (late) maternal grandmother made lamb once. I had it, and it was really good. You really did a great job of making that lamb. Cheers to you and Mr. Beans, Harry! ✌️

      Ontario lamb is excellent, but more expensive than NZ imported. I've smoked a fresh lamb leg (cut to fit my WSM 18), over Irish Peat Moss. Nice stuff.

    Harry, I love the video. I’m from and live in Owensboro Ky, where the black bbq dip is legendary. Mutton can have a strong flavor to people not familiar with it, especially with the dip, but they pair so well together. A little bit of lemon juice or zest helps to round out the flavor. The dip goes well on pork and chicken too. I like to mix it about half and half with some brisket drippings and use it to brush on some brisket slices. Give it a shot.       Burgoo is another favorite. There are a lot of variations between different restaurants and also a lot of churches in the area that sell bbq and burgoo for picnic fund raisers. I have never made it but I know it is very time consuming and requires nearly constant stirring to keep it from burning. It’s usually prepared in huge kettles over a fire when it’s being prepared in large quantities.
      Bbq dip and burgoo recipes can be hard to find. A lot of families seem to keep their recipes a secret lol, and pass it down as a tradition. I’m glad to see your interest in Kentucky cuisine. I’ve thought about starting my own bbq channel to show some KY bbq. Eventually I’d like to get into competing. That’s why Im such a big fan of your channel for all the instruction and the science behind good bbq. Thanks for the response. If I can find any recipes I will be glad to share.     now you're talking! Western KY is a sleeper on the BBQ map of America. Even more over looked is what is considered here in KY as Monroe County dipped sliced shoulder, and no one does it better then the Smokey Pig in Bowling Green KY

      They don't what they are missing either. I love Pork Butt sliced about 2 inches thick and Hickory Smoked for about 8 hours. I'm in Graves County and we always had a few sheep on the farm and a couple times a year we had BBQ Mutton... Now days the only place to get good mutton is at one of the Catholic Picnic's or do it myself.... Plus we do a pretty go Pork shoulder.

    The best mutton barbecue is made once a year at St. Peter's Catholic church in Waverly, Ky. The men smoke it overnight in a pit dug into the ground and they mop it all night. The picnic at the church is the last Saturday in June. The best restaurant barbecue is also in Waverly, Peak's. Moonlight has a nice buffet and their mutton is good, but not as good as the two above in my opinion.

    Harry, you're a genius. May I recommend Henderson's Relish instead of Worcestershire sauce? Very similar flavour profile but distinctly different.

    My South Georgia Grandmother loved mutton, it has a funky smell when cooking but tastes great. She would stack cinder blocks start a wood fire get that down to coals and grill her some mutton.

    Although I'm not a big fan of mutton or lamb (in fact I hate the taste), that rub and sauce should go good with either beef shoulder clod, ribeye roast, or a ham. Thanks for sharing.

      Yes you go to a Halal meat market or Mexican market to find mutton. Goat also works well if you like more gamey aroma like me. I love goat stew and goat curry

      moolight has kind of gone down hill over the years. most of thier meat just sits under a lamp :(. used to be real good. but there is a small hole in the wall gas station/restraunt in uniontown ky called Brents that has the best mutton, hands down. uniontown is, ugh hum, country ..lol.. bbq is great there tho

      @@SlapYoDaddyBBQ once I tried to cook a leg of lamb , I think the meat was bad cause it just didn’t taste right ... so I’m from Kentucky, first time I heard of this recipe lol , I was just wondering if You can substitute it for pork instead of mutton ?
