Agave nectar, anyone?

  • Three days ago I went in the greenhouse and noticed (how had I not seen this before?) that an enormous flower stalk had extruded from the top of my Agave havardiana and was already pushing up on the top of the greenhouse. I had to try to pull it over because it was piercing the greenhouse plastic, and its a 2-layer inflated affair, so I couldn't really make a hole in the top of the greenhouse. Attaching a come-along to the stalk, I cranked and cranked but instead of bending, it broke off at the base and nearly speared me like I was jousting with it! The thing weighs 150 pounds, like a beached whale. The contents are fructose-rich and edible raw, very sweet and starchy. I'm making agave nectar. It was the least I could do.

    I bought a house recently with an agave in the front and I don’t know they blossom but I came back from a weekend vacation and noticed a 4 for tall stalk coming out of it and was thinking wtf. Now it’s been like 5 days and it’s taller than me.
    I looked it up and while it’s called century plant it doesn’t literally take a century, it just takes a relatively long time. The blossom also is an indication of the plants end of life regardless of you cut it off or not, so if it isn’t dead it will die soon. Certainly you extended its life a bit though by removing that huge energy expenditure of a flower.
    Im gonna let mine blossom and then collect the seeds

    That long stem is edible, provided you fire roast it. The fire caramelizes inner stalk while singing off the hard peel.

    Did you make an updated video on what you did with the stalk? How did you make syrup from it? Did you get sick after eating the pulp?

      The raw pulp was sweet and a little bit acrid--nobody got sick! we also cooked it down. it made a nice syrup.

    Amazing agave there! However, I noticed this was not a agave havardiana. Havardianas are way smaller than this; usually no more than 4 feet tall. What you have there looks like a agave angustafolia, an by the bluish color and size, I bet it is a agave tequilana!
