That jello on top looks a lot like "Tortenguss", a glaze we use in Germany containing cornstarch, carrageenan, sugar and sometimes red food dye and strawberry flavouring. It is used a lot here to hold strawberries or other fruits in place and is always clear. Maybe it is something like that on the strawberry one.

You can prevent this by putting a sheet pan in the rack above your cheesecake so it acts like a sunblock to keep the radiant heat from directly cooking the surface of the cheesecake. This is the same reason home made bread boules often have over cooked bottoms when done in cast iron. The oven heating element shines infrared light directly onto the pan, making it get hotter than the ambient temperature in the oven. A sheet pan below your loaf (not touching the pan) , and the problem is solved.

When I was 14 years old, I have tried cheesecake for the first time in my life and it was Junior's! I fell in love immediately and went there 2-3 more times before we flew back home. I thought I saw something somewhere that Junior's adds sour cream to their cheesecakes, it would explain the tang and reduced sweetness in the Junior's plain cheesecake compared to Alvin's homemade plain cheesecake.
This has inspired me to try different crusts. Like, what about cornflakes or shortbread? Cornbread? Ginger snaps? Lemon would be great with the ginger snaps, while maybe a berry flavor would work with the corn-based crusts.

Regular Oreos with chocolate cheesecake, pumpkin spice Oreos or gingersnaps for pumpkin cheesecake, lemon Oreos for Key lime pie or any citrus-flavored cheesecake. The key breakthrough is that nobody ever has to limit themselves to just graham crackers for crust bases anymore.
Glad you saw the light of the nilla wafer crust. I know it is sacrilege, but run it up the side half way, and make it rounded so it is almost bowl like. When you get to the edge of a slice you can pick it up and eat it like a pizza slice.

You can get something here called "Danish dessert" it's like a slightly thicker version of rote grütze. I'm pretty sure that's what Junior's uses.

I highly recommend shortbread cookies for the crust. Last time I used a blend Royal Dansk and Walkers. I'll never go back.
