I tried this bread yesterday. It came out so crispy on the outside and soft on the inside. Thanks a lot. You are my reference guide for bread baking. 🙂 I had to improvise a bit since I dont own a traditional convection oven or a Dutch oven. The one I have is a microwave convection type, which doesnt have space for water bath either. So I baked the bread in a big borosil glass bowl with the lid and it turned out like yours.
I am no baker but this recipe and step by step instruction made "better than restaurant" quality. I allowed it to proof for more than 12 hours. This is absolutely phenomenal!
Made this yesterday and was seriously worried as after 3 plus hours my dough hadnt changed/risen/spread out/become jiggly.... left it overnight with not much hope, but turned it out this morning, baked it up and it was perfect!!!!!!!!! best loaf I have made to-date. I think the sugar made a diff in this one as I have never previously added sugar! Beautiful texture and flavour, very happy!!!!!!!!!!!!! getting another one on the go now

Hi Bincy: Just wanted to tell you how nice your recipe turned out! I have two torn rotator cuffs, so kneading bread dough is out of the question for me. Learning that you can make wonderful bread without kneading was very exciting. I love rye bread with caraway, so I altered your recipe a little. I used 2.5 cups of unbleached flour, and .5 cups of dark rye. Also, I thought it might need a little more yeast to get the same rise, so a full tsp. was used and added 1/2 hour to the original proof. Anyway, it turned out beautifully! Although there isn't much sensation of rye flavor, the bread is delicious! Next time, I might use 3/4 - 4/4 cup of rye. There was no caraway included with the dough, but I used an egg wash and sprinkled the rye seeds on top. Thank you so much!

It looks like the best recipe out there. A little sugar i think adds a more soft and fluffy inside. I have seen other recipes where the inside looks heavy and dense. Can't wait to make your recipe. Thanks for sharing

I already have some little experience in bread baking but really love to try new recipes and methods, I made your bread, in 5 min will take it out from the oven. The oven rise ia FANTASTIC (made in dutch oven), beautiful roustic crust, I am excited to try the crumb in the morning. During the dough proof (total 2 hours) i made 2 sets of coil folds (when you take the middle of the dough and two ends of the dough are kind of folding under the middle) at 1 hour and then 30 min after the first fold. It helped my dough to become stronger as I was a bit scared because it is highly hidrated bread. Thank you VERY much!

This is a solid recipe...thank you Dr. Bincy! It's flexible - morphed slightly - 50/50 white to whole wheat and added 1/3 cup sour dough starter which itself is whole wheat and it came out excellent with just enough sour dough flavor. Also used brown sugar and use All Purpose Unbleached and discovered the "lemon juice trick" is largely irrelevant - didn't bother this time. I'll buy actual bread flour some day and see if there's much of a difference.
@@bincychris I also let it sit for ±12 hours as I like that fermented flavor plus I have other things to do. Also noticed that one doesn't need to be so 'timely' with the folding and I did knead this a little but not much focusing mostly on folding. This is very much like Maltese bread and finding these high hydration doughs are very flexible, even adding olive juice/brine to the mix.

This crusty bread was absolutely delicious. The only thing is the bottom of the bread was stuck to the parchment paper when it was finished baking. I used olive oil to brush the parchment paper and it made it easy to peel the paper off. The next time I will grease the parchment paper before I sit the dough in the bowl for the second proofing. I'll probably be making a loaf of this bread once a week from now on.

I already have some little experience in bread baking but really love to try new recipes and methods, I made your bread, in 5 min will take it out from the oven. The oven rise ia FANTASTIC (made in dutch oven), beautiful roustic crust, I am excited to try the crumb in the morning. During the dough proof (total 2 hours) i made 2 sets of coil folds (when you take the middle of the dough and two ends of the dough are kind of folding under the middle) at 1 hour and then 30 min after the first fold. It helped my dough to become stronger as I was a bit scared because it is highly hidrated bread. Thank you VERY much!

This is a solid recipe...thank you Dr. Bincy! It's flexible - morphed slightly - 50/50 white to whole wheat and added 1/3 cup sour dough starter which itself is whole wheat and it came out excellent with just enough sour dough flavor. Also used brown sugar and use All Purpose Unbleached and discovered the "lemon juice trick" is largely irrelevant - didn't bother this time. I'll buy actual bread flour some day and see if there's much of a difference.

@@bincychris I also let it sit for ±12 hours as I like that fermented flavor plus I have other things to do. Also noticed that one doesn't need to be so 'timely' with the folding and I did knead this a little but not much focusing mostly on folding. This is very much like Maltese bread and finding these high hydration doughs are very flexible, even adding olive juice/brine to the mix.
Just tried baking this morning.. it’s all good.. making another batch.. haha

This crusty bread was absolutely delicious. The only thing is the bottom of the bread was stuck to the parchment paper when it was finished baking. I used olive oil to brush the parchment paper and it made it easy to peel the paper off. The next time I will grease the parchment paper before I sit the dough in the bowl for the second proofing. I'll probably be making a loaf of this bread once a week from now on.
