There's something very British about how understanding and polite Moss is when he realises the mistake. As soon as he realised that the cannibal wasn't a raving lunatic, but a quite reasonable fellow, he was all over the initial chock and just wanted to help in a way that didn't involve offering himself up to slaughter.
It's kinda funny how this cannibal guy is almost like a perfect realistic stereotype of most real modern German people, in spite of how 'hardcore' their language sounds, and their badass metal/extremely kinky reputations, they really ARE actually this outgoingly incredibly over polite and friendly and quirky to people, especially if you are a lost tourist or something. One of my favorite scenes in Band of Brothers was when the German officer was allowed to keep his sidearm. I read somewhere that this was not unusual. The great thing about Moss is for all his awkwardness he really does well in situations he shouldn't as he just enjoys interacting with people.
