This dish screams quick, simple and delicious. The ultimate comfort food/meal you can whip up in 30 minutes.
Call it a Cantonese gyudon. We first stir fry minced beef with green peas, using a mix of very simple seasoning. And while still piping hot, crack a whole egg on it.
Next, immediately mix the smooth, creamy egg into the mix of savoury beef with steaming hot rice and just DIG IN!

The Chinese are comfortable using raw egg. If you are concerned about using raw eggs, then you can poach an egg or use onsen egg --the japanese sauna egg

you can omit the wine if you don't take alcohol

you can soak them in warm water to remove any frost, then drain before use

you can leave it out, there isn't a substitute

You could if you want to or do it like most people do for this kind of dish, add the raw egg preferably last into the hot food and mixed it immediately ike a salad. The heat from the hot food will cook the raw egg into medium rare egg.
Would changing beef to pork be the same? :D
you can use pork or chicken also
The taste would be different of course.

I do this all the time except I always added the sauce once the meat was cooked. Didn't think to marinate before and then cook. Also, I fry an egg and then put it on top.. you should probably cook your egg before cracking it raw onto the dish, no? :S
you can do poach yolks really depends also from you dieting believes and where you get your eggs from.
Eating raw chicken eggs with hot food is a common thing in Asia. You're suppose to add the raw egg preferably last into the hot food and mixed it like a salad. The heat from the hot food will cook the raw egg into medium rare egg. Something like a classic Carbonara.
Or if you don't dare to take the risk, use a raw pasteurized eggs like what they do when making modern mayonnaise. The last time I check, mayonnaise made from raw egg, right?
Check out Japanese Tamago Gohan or Sukiyaki which you boil the meat in a hot soup and dipped it in raw egg before you eat it or Malaysia & Singapore Moonlight Hor Fun & Claypot Lou Shu Fun.

Yupp. Cantonese dishes oft include raw eggs.
Personal favourite is "yut kwong hor" (moonlight noodles).
Salmonella is a worry but you're supposed to mix it all up as soon as the food is served so the heat will partially cook the egg.

@@ronica2623 i know its becouse of the process or handling.. salmonella only exists on the shell not on the egg...(if im making sense. Apologies i have a hard time explaining in english).. but salmonella in asia is not really common..

why crack the raw eggs on top
It gives an extra umami flavour when you mix the yolk into the rice. Remember to make sure your beef and rice are hot enough to cook the egg slightly :)
