Really enjoyed this video. Maria is a treasure, and I am certain her fettuccine with olives and tomatoes was superb. The olive harvest time portion was interesting and really defined how Maria and her past is a continuing tradition today.

i spent time in rural Spain back in 1991. i was fascinated by the different olives offered at the corner bars/tapa restaurants - each made by the owners. all a bit wild and tannic with roadside herb mixes. i wanted to do an ethnographic survey of olive processing methods in Spain for a PhD. there's still time, but who needs the PhD!?
All these ladies had difficult lives but became such rich women ✨✝️💕🙏💕🌹🌹🌹 That pasta and olives will be something I will never taste in my lifetime 🤔🌹🌹🌹

After the dough is kneaded, it should rest 30-90 minutes for the gluten to relax. It rests at room temp, but can be refrigerated over night...always wrapped air tight when resting to avoid over-drying. She lets it dry after rolling, before cutting, and this helps keep the pasta from clumping, sticking. Should dry at least 30, but depends of the humidity, air temp, and how moist the pasta is to begin with... Hope this helps.

I stopped the video when you mentioned that your subject is in “Eetree” (sp)?, famous for its olives. Knowing I had the town name and spelling all messed up, I have hoped this video’s stnuuning video graphics would ensure I would better understand this neighborhood. Instead, 10 minutes are scanning the may, I realized the are wasn’t on this map. A classic place, known for its olives and pasta should be praised in all local maps educating others about culture and cuisine.
I mean if the reason this video is viral is because a 90 years old can cook pasta by hand. Then my niece who is just 1 year old walked upstairs from the basement to the 1st floor without any help.
