    Not enough is given to the the production quality of Pasta Granies. The filming, directing, editing, etc. that goes into every one of these deeply moving videos. Bravo to Vicky and everyone who makes Pasta Grannies!

    I know this might be out of context as to what your channel is about but i love how you show old women as purposeful matriachs. I recently was looking at Goya's sketches and paintings, what moved me a lot was reading how often the older women were vulnerable targets of witch hunts and lynch mobs during times crisis or often abandoned.

      I agree with you.
      Pasta Grannies highlights the fact that as you age, your worth doesn't diminish, it actually gets higher. I'd like to see younger people, who have never had Nonnas, try to make the dishes that these lovely, wonderful women make with such ease. Only a lifetime of experience can produce these perfectly made dishes.

      My great grandmother would put both women and men in their place if they stepped out of their purpose. She had 16 children and worked most of her life. She was born in the 1920s in the industrial Midlands.

    Olga is most certainly a master. She broke out her glasses and then you know it is serious. Her grandchildren and great grandchildren are truly blessed to have such a matriarch. Paired with that sauce I can almost taste it from across the ocean. I truly love the culturally respected place these ladies in all of your videos hold. Another great episode!

    I like how Olgo doesn't even need to measure, she just cuts the maccheroncini by instinct, knowing the width is perfect because it is all muscle memory at this point.

    Sometimes I start getting jealous of these cooking skills, but then the nonnas will say that they've been doing it ever since they were knee high with a handful of flour, five siblings and the one chicken Mussolini didn't take and I'll go 'nevermind, it's absoloutely fair I don't have skills like that'. This looks delicious and I hope the grandchildren get excited to eat with Olga when they get such fare.

      I dislike adverts, but they contribute to the running costs. There is a big push behind the scenes to get creators to do mid-rolls as advertising revenues are falling dramatically. So I may have to! best wishes, Vicky

    Too good to be true,... the pasta strands are so delicate . The Nona has magical fingers.
    When the sauce is blended and the cheese is generously sprinkled , it just makes me want to join in and appreciate the goodness of this delicious dish.

    Olga (and many of the other grannies!) reminds me so much of my little Slovenian great-grandma, who ruled her kitchen in similar fashion. She passed 30 years ago at 96 yrs old, and I wish so often she could show me how to make some of her specialities. I love Pasta Grannies so much for preserving such treasures of life knowledge!❤❤❤

    They've made fresh pasta making much more difficult for themselves by having to figure out how to make a dough which will hold up to being cut so thinly. Our mothers and grandmothers constantly challenged themselves to do more and more difficult techniques. It is making the dough by hand which requires the greatest skill. The sauces are easy by comparison.

    So bello. Wonder if there’s a difference between incorporating the pomodoro and cheese inside the bowl versus the wooden cutting board. Clean up would sure be different.

      I suspect it's a habit from the days when folks didn't have bowls. For maximum mixability it would help if it was a platter rather than a bowl? best wishes, Vicky

    Isn't it extra work to put the sauce & parmesan on the pasta on the wooden board instead of directly on the platter? I would separate the pasta on the wooden board, then put it on the platter & add the sauce & parmesan.

      The maccheroncini are very thin so in order to dress them completely with the souce, Bruna used the board and then finished the dressing in the serving plate.

    8:47 Here now I'm wondering, why did she season the pasta on that wooden cutting board and then pass it into that soup tureen, into that bowl and not season it directly into that bowl. What would be the difference ? Does that pasta become “tastier” seasoned on the wooden cutting board ?

      Perhaps she mixes it on the board for presentation purposes, so the bowl looks clean around the pasta. And I guess they made quite a lot of pasta, so the portions were made so they could dry it in the right amounts to use later. Well, that’s my theory at least!

      the pasta is often gifted, used in the food festival, or sold and it helps to keep a track of portion sizes - there's no point cooking enough for 8 people when only 6 are eating it 🙂🌺 best wishes, Vicky

      The larger surface area makes it easier and faster to get the strands covered in sauce? Especially when it is all hands on deck at the yearly festival feeding thousands of people. Use a platter not a board if you prefer 🙂🌺 best wishes, Vicky
