84 yr old Vanna makes 'corzetti' with her great granddaughters! | Pasta Grannies

  • Get your children cooking! 84 year old Vanna is joined by a granddaughter Sara and great granddaughters daughters Adele and Giulia this week! They make corzetti pasta with tuccu, a meat sauce special to the Genova area in Liguria. It's a kind of cross between a pot roast and a casserole. The rich tomato sauces dresses the corzetti pasta, and as the girls point out, it's also great with taglierini.
    The corzetti dough is 300g 00 flour, 100g semola rimacinata (this makes it a firmer dough), 3 eggs, 50ml of white white and water if needed.
    The tuccu is made with 400g of whole pork loin, 250g stewing beef steak, onion, carrot, celery, parsley, rosemary sprig, 1 garlic, 1/3 of a nutmeg, salt, pepper, 300ml passata, white wine and water as needed.

    These little girls will never forget this time with their great grandmother - just as I am sure their mother remembers her times cooking with Nonna. So much love, joy and tradition!

      My Mother never let any of us in her kitchen & because of that, I can't make any of my favorite dishes that she made for me. She did let me help her with holiday meals when she could no longer make them all by herself. She made all the entrees which she still didn't let me watch her make. When she was finished cooking, I would go into the kitchen & make everything else.
      I wish cooking at my house was like the young ladies are experiencing now. It is a priceless memory, & every time they eat one of their Nonna's dishes they will think of her with love.

    Pasta Grannies does such a marvelous job showing the joyous families. It’s so interesting to me as an Italian American to see how much nutmeg is part of Italian cooking. It’s a spice I didn’t really learn to cook with aside from some winter pastries.

    My nonna in Italy taught me everything I know about cooking. I still remember (6 decades later) making gnocchi and ravioli with her and picking basal and herbs out of her garden. Priceless for this little girls.

    So this is why my Mom's family always called sauce tuco. My mom and her parents left left Trieste in '50 to go to Argentina. And in Buenos Aires, the majority of early Italian immigrants came from Genoa. I guess that's where they picked up the word.

    These multigenerational family cooking episodes always renew my faith in humanity. The meat sauce alone is worth watching but to have these ladies doing it together brings a huge smile to me. Those children will someday realize the beauty of the moment. All are blessed. And I have to try the wine in the pasta dough! Another gem of an episode.

    It's so important for the children to be involved in the cooking. They are learning whether they realize it or not. The first few times I made some of the traditional recipes from Liguria, I did it without looking at a recipe. I had seen my nona and father do it so many times before, I just did it without any thought at all.

    So lovely to see the little girls join their great grand mother to help her in the pasta making process. The pride on their faces as they take on kitchen duties in earnest...fetching the fassata, helping in pressing the wooden stamps on each coin like pasta, and arranging them neatly on a tray is such a delight to observe...years later these
    precious moments with their grandma will be fondly remembered by them.

    What a wonderful production line and is interesting to learn about the old days. The final result looked not only artistic but also delicious, it needed the special family to do this, I bet the meat was simply superb also.     If i'm not mistaking, the "Gusti" is also called a Mirepoix or Soffrito. A classic italian aromatic mix of onion, carrots and celery. Same amount for onions an carrots, and half for celery (so 100+100+50g for example). Very nice italian cuisine !

    I want to cry every time I see one of these beautiful dishes because I can no longer eat tomatoes; they cause me to have gout flare-ups. I wish there was an alternative for making these wonderful sauces. I thought about using red peppers but have yet to try them. Any suggestions, anyone?
    Is it possible to post the recipe for Nonna Vanna's homemade beef stock cubes? The store-bought ones have too much salt for me to use & I would love to make them myself. Thanks.

    ❤ nutmeg! Every granny's favourite hallucinogenic. My grandmother's rice pudding was always followed by a night of magical, transporting dreams. She was the most dour, cold, judgemental , sour human from 1908, and her biggest superpower was the ability to suck life, hope and humour out of a room, with just a single glare, but oh boy, her rice pudding...

      Could have been the twin of my grandmother (born 1913). She was a very harsh and mean person. She especially did not like any children. We had to be proper, polite, no talking, no noises allowed, seated in absolute silence, stiff like corpses at her table. Oh the horrors when we had to visit her on every other Sunday after church. She made fabulous deserts though but we were very afraid of her. Her eyes could kill and her nagging was from another world. Poor soul who spilled the soup at the table, she was quick with her hands. She stayed the same until she died with 93 years of age. Everybody was sure she made it this long only due to her poisonous personality, even though she smoked like a chimney and liked to drink cognac on any given occasion.

    What is a stock cube? Is that like a bullion cube?

      I think this is a UK/American difference in word usage? Stock and bouillon cubes are used in exactly the same way. For the British, bouillon is the French for broth. I think of stock as being a more intense, longer cooked version of broth/bouillon. The Italian is 'brodo' for both broth and stock 😀 best wishes, Vicky
