How to make a delicious Arborio rice and beans dish called Panissa! | Pasta Grannies

  • We visit the lovely village of Arborio, where Giuseppina shares her recipe for a local hearty rice dish called panissa.
    Big thanks to farmer Leonardo Invernizzi, check out www.invernizzileonardo.it - for details on how to buy his rice (at Christmas it is packed in festive cloth bags, making excellent presents).
    Fresh Salame are 100% ground pork (shoulder and belly) with no rusk. You can swap with an ordinary sausage if you have access to good quality, meaty sausages, otherwise mince your own pork and season it generously with salt and black pepper, minced garlic and a little red wine.
    250g dried borlotti (cranberry) beans, cooked, keep the cooking water.
    1 litre meat broth
    2 shallots, 50g lardo (or the fat from unsmoked bacon rashers), 300g crumbled salame meat (see note above), 350g arborio rice, oil, butter, salt, pepper, 1 tablespoon tomato paste, 30g butter, 60g grated parmesan.

    And now I didn't know that Arborio rice takes its name from that village. I didn't know there was a small town in that region called “Arborio”.

    Giuseppina!! I love the history of her family's copper pot for their special rice and bean dish! So much love has been poured in and out of that pot! It looks so delicious! I prefer arborio rice, and the alternating of stock was a wonderful idea and tradition.

    Loved this vid.❤Beans cooked at home(not from the cans,but from scratch) accompanied by rice is a very common dish in Albania.Adding some homemade dried meat to the beans ,it becomes a masterpiece.

      I also found it interesting about Arborio rice. And as an Italian I didn't know that in that region there was a small town called “Arborio” and that that type of rice took its name from that place. With these videos not only people from various parts of the world learn new things, but we Italians also learn about local dishes, regional dishes that we may have never heard of.

      @@simoisdrawing E ci credo ! 😀 Ma io devo dire che in questo video sono venuto a conoscenza del perché quel riso si chiama proprio così. Non sapevo che in quella regione esistesse una cittadina di nome Arborio e che poi quel tipo di riso avesse preso il nome proprio da quel posto. Con questi video anche noi italiani impariamo un sacco di cose ed impariamo a conoscere piatti locali, piatti regionali (specialmente se proveniamo da tutta un’altra zona d’Italia, da tutta un’altra regione) che magari non abbiamo mai sentito. Ma a volte anche dalla stessa nostra regione scopriamo in una determinata città, in un determinato paesino, un piatto che forse non avevamo mai sentito. 😊

    LOVE this channel, and absolutely adore this segment. Giuseppina is a treasure, and I can't help but note both her appearance and nature to my own grandmother. Now, in the interest of bringing a "cookware concern" to my comment is an observation of her beloved copper pot. Yes, copper is traditional in this recipe and because of its heating properties arguably essential, but copper cookware that is intended for general cooking is traditionally lined with tin (or more recently stainless steel) to prevent a toxic interaction between copper and acidic food ingredients (here, the Barbera wine and tomato paste, for example). The exception is when making sweet concoctions such as candies, syrups and jams where no such chemical interaction occurs, and the beautiful pot here does in fact look like a traditional jam pot. That said, I'm sure the occasional use for Panissa would be fine, but just a note to those planning to buy and use a similar piece of cookware for regular use. Ciao, amici! ❤

    Family pot brought back memories of visiting my sister in boarding school in Kenya on Sundays with mum's pilau rice still in the special pot it was cooked in.Families had picnics in the school grounds. This heavy pot was only used for pilau and is still in use today. Mum is 90 and my sister is 67. Happy times

    Thank you for including the recipe:) My husband is from Ecuador and most people in the United States think of rice and beans as being a traditional Mexican dish, it is different in his country. I will give this a try as he is not fond of the traditional baked beans we are accustomed to eating in US as they are too sweet. I edit to say that I went to site of Leonardo Invernizzi and did not understand. I would love to buy his rice straight from him and know if he ships abroad???

    Man the fresh salame, the lardo, butter, parmiggiano, beef stock, fantastic rice and tender beans. No way this won't be awesome. There's no way I can get fresh salame but I'll try to make it almost the same

    Very good recipe of rice and I also like her copper cooking pot. These copper pot again in fashion and there are health benefits of these pots. I remember my grandma had a lot of copper pots in late 70s even she used copper glass for water I have one question how is weather of that place because I think rice fields must be humid again 👍for this new and informative episode

    Obviously I could not source all the local ingredients here in the US, but even with what I was able to get locally, this is a delicious recipe. Don’t be afraid to try it if you can’t make it exactly like this, as it will still be delicious and hardy.

    There is a big cool, Linari, rivalry between the provinces of Vercelli and Novara. They traditionally have two slightly different versions of panissa (or paniscia), both claiming there’s is better. Josefina used a kind of salami. That is more typical of the Novara province. Both are equally yummy. Would be lovely to see the video of a paniscia from Novara.

      Nope, the recipe from Vercelli has always included salam dla duja. The difference is Novara also includes cotenna
