Regarding the cords. I always interpreted it as being the pineal gland, located in the brain. This gland is sometimes referred to as the "minds eye". Perhaps this is the "eyes on the inside" Byrgenwerth and the healing church are obsessed with. It also explains why the fishing hamlet villagers skulls have holes in them where the inside of their heads have been searched for "eyes". Perhaps this gland forms the link between child and great one, and why all the cords are harvested from dead children.
I really would like to have more information about this subject of chords

I always thought that the celestial children were mostly Ebrietus's children, but because she's a left-behind great one, she isn't as evolved, so her children don't immediately die or have third chords the way Oedon and Arriana's child does

This episode is kind of peak _Bloodborne_ lore-hunting, as it's basically using reasoning that itself is teased from the content to start building _other_ arguments about the content (like Richie's whole "the thing that's literally called an umbilical cord isn't an umbilical cord, to hell with the text" moment there...I mean, he's probably right, given everything else in the game, but at the same time it's one of those moments that leads to people seeing Velka on a grilled cheese sandwich). That said, it's very fun. And it really doesn't make a lot of sense: for example, the Yharnam Stone, that we're pretty convinced was the original physical body of Mergo, looks like a normal-ish human fetus, not like a Celestial Child, but most people believe that Mergo is the child of Oedon just like Arianna's baby. (On the other hand, the developers may have had Arianna's baby look like a Celestial Child simply because they didn't want the moment where the player literally murders a newborn baby to have something that looked like a human kid because ratings boards would have some issues with that.)
If we extend the Ebrietas = Pthumerian Rom comparison that comes in along like the 30-minute mark, and the Celestial Children = Rom Spiders extension thereof, maybe both entities are in fact Ebby and Rom's actual children/spawn, but they lack the Third Cord because Ebrietas/Rom lie sort of on that line between Great One and not-Great One? Maybe that's the point of them being Kin from a game perspective; they've become Great Ones but can't have Great One children, kind of a dead-end line (maybe because when Byrgenwerth turned Rom, they had access to only one Third Cord?).
I thought the celestial children were a side effect of either the church’s experiments on Yharnam’s people, or a side effect from proximity to Great Ones. After hearing the woman in Cathedral Ward crying out for her baby, I assumed she had given birth to a celestial child, like Arianna, and the previous ones had been taken by the church and left in upper cathedral ward, and that’s why the building is called the orphanage. I can see the church taking all these children in the hopes they are infant great ones, realising they’re not, then just abandoning the project, leaving the children and the building guarded by a few church servants and a locked door.

I am pretty convinced that they are children born by mothers who had inbued a lot of blood and or during a blood moon. And the healing church gathers those and tries to get them to ascend. They are found in upper cathedral ward. Ariannas child is special, because she descends from cainhursts bloodline. I dont think they turn into ebrietas, I think they turn into amygdalas. Or at least most of them do. There are statues that make it look like they turn into amygdalas. Some of them show a transition, with the lower body of a celestial larvae and amygdala upper body / almond head.
I got so happy and hyped seeing the notification just to say. I was a bit curious about them also, and I loved listening.
Also, since the crawling research hall patients kind of resembles them, were they an attempt to mimic celestial children and did some of them ascend into Great larvahood maybe?

them being from isz is a good explanation for where they came from, but i also liked regrave's idea that they were children collected from yharnam, tho he could of been talking about the celestial emissaries instead. but the real question is what are they doing with them, like if they came from isz why are they still there, and if they made them themselves, for what purpose?

wait queen annalise had a kid? i thought her whole deal was she was trying to have a "child of blood" but if there's a dead kid with a cord of the eye then wouldnt she of already had one?
They cut it in the original game. for all we know, canonically she had no children, but in the original release, the description for the Umbilical cord from the Old Workshop talked about being taken from the child of blood.

My theory is that they are the Children of Ebrietas, but they aren't fully complete, perhaps because they made normal human women pregnant, instead of ones with Pthumerian blood. That's why they don't have cords.

I would make this addition to the list:
Amygdala and the Lesser Amygdalas
Maybe Amygdala, the boss one that we fight, is the only true, unique Great One, that also brought with it lesser, imperfect kin versions of it. Maybe the Lesser Amygdalas simply grew to be these huge things during centuries or even thousands of years, and the same might happen with other lesser kin in the future, give the chance.
