      ​@@souschefukhow long to smoke a portion of beef brisket? Also, I can put the whole thing inside the oven and let it smoke there for hours?

    Hi there, what does the wood chip compartment look like after a cooking session? How easy is it to clean off the residual wood chips? Thanks

      If you wrap the chip in aluminium foil and put some holes in the foil, no mess. It also helps slow down the burn

    Thanks for this, very helpful. I made a mistake with my first stovetop smoking which turned out inedible - I closed the lid and left it too long, the result tasted frankly toxic. I've realised that less (time) is more, so I'm going to make adjustments. For meat which I'd like sear - do you suggest smoking first then searing afterwards? Such as lamb or duck? I was inspired to get a smoker after having the most heavenly hay smoked carrots at a restaurant.

      That's a great question - I'd smoke then sear, so you get the crispiness straight from the pan

      Yes! But take care to heat very gently with it.
