      it cooks quite quickly so don’t overcook it. temperature control is key

    I add wood chips but don't use the wire rack. I place a cedar plank in the pan instead. It's a wonderful outcome. 😋

    That looks lovely!
    I've ordered a stovetop smoker so I will try this recipe once the Copper River salmon comes in season. It is the only fresh salmon that I can get where I live and the frozen product just isn't as good.
