Hi again from Japan. Just a small tip: we use dried tea leaves for smoking fish, as it imparts a subtler flavor than, say, oak or hickory. After brewing a cup of tea, just put used tea leaves in a small colander and let dry in a warm place.
Great tip! What tea type is best?
@@mothe1st We use basic green tea and sometimes "hoji-cha" (roasted green tea leaves), but found that even flavored teas like jasmine and chamomel--even herbal teas--work well.

Hi from northern Japan. Thanks, Daryl-san, for the clear instruction and important tips.We've used it indoors and out, and even inside our home-made outdoor brick oven, keeping the sauce warm atop the lid. (I know it can also be used as a "regular" baking/roasting pan in the kitchen oven, such as doing lasagna (although the ovens we have here are quite small, so the pan won't fit)). But we'd all rather be cooking outdoors, even in the winter, eh? Looking forward to your other videos. Arigatou!

I just made a hot dog on this thing and I'm AMAZED at how it tastes like a real smoked hot dog off the grill. I even burned it a little so it has the burned dog flavor/texture that I love. I'm shook.
I worked as a concierge for a while and was blessed with a cast iron stove top smoker by Cameron's. Trying it for the first time, but it seems few people have videos about such... have you heard of this before?
I have the small and the large sizes, I like the results also what I did I removed the lid and covered the cooker with foil instead did really good

I used the one I bought for the first time today. I did sockeye salmon and it was delicious. I set a cast iron skillet on top of mine to get abetter seal but will do the tweak next time. I love it so far.

What trips me out is using my charcoal smoker im used to seeing smoke so when my homemade one wasnt bellowing smoke i was wondering if it was smoking good but i took the lid off and the tilapia looks good.
Edit: wow I tasted the fish and it's every bit as good as a charcoal smoker. I let mine cool and put em in the fridge. For some reason cold food that has been smoked seems to pop with smoke flavor. I prefer eating my fish cold or reheating it the next day. Kinda like soup getting better the next day to me.

Very cool review. Where I live it's hard to smoke in the winter months because of the wind. Just don't have a lot of cover so this might be a nice way to do it. I always appreciate your videos I've learned a lot from you thanks!

Bad Beast Barbecue I'm using one of those masterbuilt 30inch electric smokers. It's pretty well insulated. It works, the problem is me. I'm not well insulated lol. We are up in the mountains. So the wind makes it hard on me.
Oh man, yea I can understand how that can be rough. Well if you get one of these, hope it works out. You may have to do like I use to do, move the smoker right outside the patio door so I could just lean outside on cold days and check the meat without going all the way outside.....LOL, although the wife would fuss about the door being open....LOL Best of luck and keep'em smokin'

I dont have the cameron but had a rectangular roasting pan with lid and made one. Used hickory and made an asian style marinade for some tilapia fillets.. Just smoked it 20 mins and turned off heat and im gona let em rest. Cant wait to see how they turn out. Will def use it more if it comes out good. Easier than lightening a chimney of charcoal for my offset. And its been raining so this would be an awesome alternative.

I use 4 binder clips on the corners to keep the smoke in, I rent a very old farm house and no vent, with the binder clips hardly any smoke seeps out!

I’ve had my Cameron smoker for about 10 years. The metal has held up well. But just be aware that this thing will set off your smoke detector. The lid just does not seal well no matter what you do. I’ve even tried sealing the opening gaps with heavy aluminum foil and binder clips. Still has a lot of smoke escaping.
I put three bricks on top of the lid. Works.

Thanks for this Daryl! How would you compare smoking that salmon in the Cameron to smoking it in an outside smoker, specifically in terms of how smoky the end product is? I need to smoke some tuna for a dip, which I like to be super smoky…but sheesh it’s cold outside!

Hey Justin, thanks for watching, I think the smoke flavor is a little more intense in the the Cameron than in a pellet smoker because of the smaller volume of area and a more concentrated smoke. To get the same smoke flavor on the Rec Tec mini I use a pellet tube or on the big Rec Tec, I use the extreme smoke button to add a more intense smoke flavor. Thanks again!
Yum! Question - What did you brush on top of the salmon? Butter? And what spice did you use?
Any tips on what flavors/spices work best after 5 years?
Not sure what seasoning we used, I am almost positive we brushed it with melted butter. For salmon we normally use Chef Paul's Salmon Seasoning but can't be sure that's what we used in this video.

Great video once again. Do you know if this can be used on a electric glass top stove? Or does it have to be used on a gas stove? Thanks
James, I had this cooker back when we had an electric glass top stove, I used it one time and was worried it would scratch the glass, even though it says it can be used on electric stove tops, I felt the heat from the electric element did not provide a consistent enough heat at medium to cook well. Just my opinion, I had to put the electric stove element on high to get it to cook to my satisfaction. Thanks for the question and comment. Keep them coming and thanks for watching.
James I know this question was asked a while ago but I've had this Cameron Stovetop for about 2 years and it says dont use on glass top stoves. I purchased a single eye electric element and it works just fine.

Hey Mr. Smith just curious as to what you mopped on the salmon before you seasoned the fillet.
I brushed the salmon with some melted butter to add another layer of flavor and act as a binder for the seasoning. Thanks for watching, keep the comments coming!
