I dont know if he owns the place , i am new to the channel ..In the case he doesnt own the place , the machine choice is not always in the hands of the barista who is working . Here in Greece for example , it all comes down to the deal you have made with your coffee company . In order to get a deal with you , they provide you with most of the equipment . But , if you can afford to buy a coffee machine on your own , then of course you can . If Dritan himself chose the machine , he has probably chosen the settings of the machine itself as well so he can work on his own way . I havent worked with one of those yet , but from what i see it all comes down to the pressure during the extraction . Cause as you can see in the video , he is not pressing that hard his doses in the coffee basket , so there is a chance his grinding is fine ,but his extraction time is still the same .I think this kind of machine gives you more control over that as well . But in my opinion , when making coffee , it shouldnt be about production . You should treat each coffee , each customer , to the best of your abilities . Like you are making that coffee for you ,not for the customer . Dont just try to take their money .Everyone deserves your attention and your caring .Even the grumpy ones :D . It should be all about putting a smile on their faces and help them start their day in a good mood .Offer them an experience . Thats what i am aiming for .

For the inexperienced, it looks very impressive. No question, the speed and coordination is top. Unfortunately, however, the quality of the beverage suffers. Some of the tamps are crooked and the portafilter is hammered into the machine. This makes the espresso too thin. This is clearly visible in the uneven extraction and the channelling.
I believe the coffee will not be affected much once dialed in. The beauty of lever machines can cover much of the puck preparation as lever profile is more forgiving when it comes to the pressure applied. I do agree with regards to the preparation affecting what you mentioned but for a cafe, the quality will be tasty enough but not up to once prepared better
First I am sure Dritan is a master at his craft. But as guy who watches Hoffman , Hendrick, sprometheus , it would appear to me that Dritan doesn't really care too much about tamping Coffee ratios , the milk steaming angles and temperature and such. Because you know there's videos out there that makes tamping out to be an art form. So either dritan is so familiar with his work and equipment, or those steps isn't as important as they make it out to be But to be honest when I'm at home making coffees for my family on my lever machine. I pretend to be Dritan 🤭🤭

But most of what he does contradicts what the popular "'new-wave" baristas are constantly saying. Wonder why he's getting great quality coffee and latte art by doing everything "wrong" (again, in terms of the third wave peeps).
Taste good and getting the most out of the beans may differ from each individual. Once dialed in, i believe that the taste will always be in the sweet spot regardless of preparation. In addition to lever machine which is forgiving when it comes to puck preparation. Lever have their way of pressure/flow profiling according to the puck of the coffee. Hence as pong as being tamped at an enough pressure, other prep such as wdt may not really affect much as pever profiling is forgiving. Hence the beauty of lever machines
