    📜 Ingredients for 60 cookies:
    350g (12 oz) all-purpose flour
    150g (5.3 oz) powdered sugar
    2 egg yolks
    250g (8.8 oz) butter
    1 jar of jam (strawberry, cherry, or currant)
    In a bowl, whisk together flour, powdered sugar, egg yolks, and softened butter. Knead to a firm dough. Cover the dough with a plastic wrap and refrigerate for 60 minutes.
    On a lightly floured surface, roll out the dough until 3-5mm thick. Using a cookie cutter, cut out the cookies. Use a smaller cutter to cut out the centers of half of the cookies. The dough must be cold, otherwise the cookies will stick to the surface. Re-roll any scraps and cut out the remaining cookies.
    Preheat the oven to 170°C/340°F. Bake the cookies for about 10 minutes until lightly browned around the edges.
    Spread a thin layer of jam on the bottom surface of each cookie, place the cut-out cookie on the top and bind them together.
    Store the cookies in the refrigerator for at least 7 days before serving, they will absorb the moisture from the jam, giving it a delicious flavor.
    Before serving, dust the cookies with powdered sugar.
