    📜 Ingredients for 2 servings:
    Steak:
    500g (17 oz) rib eye steak
    30g (1 oz) butter
    2 thyme sprigs
    2 rosemary sprigs
    olive oil
    salt
    pepper
    Chimichurri:
    5 tbsp (2.5 fl oz) olive oil
    2 tbsp (1 fl oz) vinegar
    3 handful parsley
    4 garlic cloves
    1 chili pepper
    1 tsp (0.16 oz) dry oregano
    1 tsp (0.16 oz) salt
    pepper
    Dumplings:
    200g / 7 oz zucchini
    1 egg
    40g / 1.4 oz breadcrumbs
    salt
    pepper
    oil
    🥣 Chimichurri:
    Mince the parsley, garlic and chili. Mix in other ingredients and let cool in the refrigerator.
    🥣 Zucchini dumplings
    Peel the zucchini, remove the seeds and grate it. Add salt and let sit for 15 minutes. Finally, squeeze out the excess water. Mix in egg and breadcrumbs. Then, by using two spoons, create oval dumplings. Pour sunflower oil on a pan, bring to medium heat, and sear the dumplings from all sides, 5-7 minutes. Set aside.
    🥣 Steak
    Cut the meat into two slices, dry it with a kitchen towel, and drizzle with olive oil. Heat a griddle pan to a very high heat. Add the slices onto the pan and cook it from both sides, 2 minutes each. Flip it several times for a nice grid to form. Remove from the heat, add butter, thyme, and rosemary onto each slice, cover with aluminum foil and let rest for 10 minutes. Cut the meat into thin slices. Add pepper and salt, cover the meat with chimichurry, add zucchini dumplings, and drizzle with the sauce from the pan.
