    Originally considered to be the traditional tribal cuisine delicacy of Araku Valley tribes near Vizag in the eastern part of Andhra Pradesh, bamboo biryani has donned many variations and flavours in the modern kitchens of major cities across India. Here's our recipe of this mouth watering Bamboo Biryani to help you make it at your home !

    Bamboo Biryani Recipe:
    For the Marination:
    Chicken Curry Cut - 500g
    Ghee - 2 tbsp
    Cinnamon - 2 sticks + 1 stick
    Cardamom - 4 nos + 3 nos
    Cloves - 6 nos + 4 nos
    Cumin - 1 tsp
    Bay Leaves - 2 nos
    Coriander Leaves (roughly chopped) - ¼ Cup
    Mint Leaves - ¼ Cup
    Fried onion - ½ Cup
    Green Chilli (slit) - 2 nos
    Ginger Garlic Paste - 1 tbsp
    Curd - ¼ Cup
    Kashmiri Chilli Powder - 1 tbsp
    Coriander Powder - ½ tbsp
    Garam Masala - 2 tsp
    Lemon Juice - ½ no
    Salt - 1 tsp
    For Boiling Rice:
    Basmati rice (soaked) - 500g
    Water - As required
    Cinnamon - 2 sticks
    Cardamom - 5 nos
    Cloves - 7 nos
    Black Cardamom - 1 no
    Bay Leaf - 1 no
    Ghee - 2 tbsp
    Salt - 1 tbsp
    For Layering:
    Fried Onion - 2 tbsp
    Coriander leaves (roughly chopped) - 1 tbsp
    Mint Leaves - 1 tbsp
    Ghee - 2 tbsp + 1 tbsp
    Saffron Water - 1 tbsp
    Cashew Nut (deep fried) - For Garnish
    Kewra water - 1 tsp
    Cooking Instructions:
    1. Wash and soak the basmati rice for 20 mins.
    2. In a deep pot, add chicken and the rest of the ingredients required for the marination. Mix it all together till they combine evenly. Let it marinate for 1 hour in the same pot.
    3. Keep the pot with the Chicken on the stove and cook it for 10 minutes till it lets out water and it comes to a boil.
    4. In another pan, bring water to boil. Add the whole spices, ghee, salt and bring it to a boil.
    5. Add the basmati rice and let it cook till it is 70% done (4 minutes). Strain the rice immediately. Reserve some of the water for later.
    6. Wash the bamboo thoroughly
    7. In a bamboo, layer the rice and chicken mixture alternatively and finally top it off with the fried onion, ghee, saffron milk, coriander and mint leaves and kewra water.
    8. Add a piece of folded banana leaf on top and press it down slightly
    9. Cover the bamboo with silver foil, and a dough made with maida and water. seal the edges
    10. In a pressure cooker, add water and bring it to a boil. Close the cooker and let it start steaming. Don’t put the whistle on top.
    11. Place the bamboo on top of the cooker lid and let it steam on a medium flame for 5 minutes and on a low flame for 20 minutes
    12. Take the bamboo out of the pot, open it gently and transfer the biryani to a plate.
    13. Serve it hot, wth raita.

      This dish is amazing. You can get the Bamboo in some nursery's.. We found it difficult as well..
