No ginger and garlic is necessary. Adding ginger and garlic would detract from the flavour and taste that the pepper gives to the meat. We don’t add ginger and garlic in every dish unlike other Indian dishes

Hi. I said about 20 to 30 minutes. It depends on the mutton. The dish needs to simmer till the meat is cooked which could take longer. The mutton I used was very tender. You could pressure cook the mutton if need be.

Yes I used boneless mutton but you could use mutton on the bone for this recipe too
Typical Anglo Indian style Mutton fry uses boneless pieces.
Stews are done with meat on the bone!

@arieltellis458 ok. We don’t normally add tamarind with pepper. Tamarind is added when red chilli powder is used in a dish.
