You can add enzymes to counter the preservatives in the hot sauce in order for the yeast to be happy and create your fermentation. I think you should revisit
I recall from making pizza dough that salt impedes the yeast. I am willing to bet that there is a silly amount of salt in hot sauce.
Just curious queries here but which enzymes do you use to counter preservatives? Is it just adding more enzymes because preservatives damage them, so you want to keep topping them up? Is this akin to taking enzyme supplements with your meals, and does that also help counteract potentially damaging effects of preservatives you eat? Or is something else? Thanks!
Salt is a major factor in why the yeast cannot take in fermentation. Preservatives aside it's would be very difficult to get it to take, and for the sake of a meme video they really dont have to take the difficult route when you can get comparative results by just simply using vodka.

@@jameshaws9986 They just wanted to see how wing sauce tastes as alcohol, they couldn't get it to ferment so they infused it instead. Simple as.

I've seen buffalo running on the open range, and people running wth the bulls in Italy, but Brianna running with Pena's super-cool bulldog is wonderful!

1) can you ferment an edible 2) would the TCH survive the distilling process.
If ATX Hotsauce still exists in Austin, it would be really interesting to see if you could make a spirit using their pre-lactic ferment pepper mash. Or if they arent interested then maybe try making your own pre-ferment sauce and use that.

It kinda makes a lot of sense;
Pipperin (the chemical that makes pepper taste/smell like pepper) is highly soluble in ethanol, I.E. alcohol.
Didn't know that it would distill over though.

That sauce bit may have some merit. You could mix the distillate into an pre-existing sauce and then burn off the alcohol to make a reinforced sauce of sorts. Double the flavor.

Just idle curiosity for the crew - would there be any significant difference in the result if you used white dog instead of vodka for the re-distillation? Or would that shift/add flavors on top of the “intended” ingredient?

Would vinegar content inhibit fermentation?
Acidity inhibits enzyme activity so it would hinder fermentation.
Pro tip: Add a few drops of buffalo sauce to your whiskey if you want Buffalo Trace whiskey
