  • The most delicious, traditional Easter cake - BABKA. It's delicate, sweet and lemony, moist and fluffy. Very easy to make. YOU WILL LOVE IT!
    INGREDIENTS :
    110 grams of flour
    150 grams of potato flour or cornstarch
    4 large eggs or 5 small eggs
    220 grams of butter
    200 grams of sugar
    2 spoons of milk
    2 teaspoons lemon juice
    lemon zest
    1 teaspoon of baking powder
    All ingredients must be at room temperature
    Start by melting the butter and let it cool. Beat the eggs and sugar for about 5 minutes into a thick mixture. Combine the potato flour, wheat flour and the baking powder together and sift through a sieve, then add gradually to the eggs mixed with sugar. Mix. Add butter, lemon juice and lemon zest, milk and vanilla extract. Mix for a few seconds.
    Pour the mixture into the cake tin - greased beforehand and sprinkled with flour or breadcrumbs.
    Bake at 170 degrees Celsius for about 45 minutes.
    During baking, the top might crack - don't worry, it's normal.
    Once your BABKA has cooled down, decorate it with lemon icing (mix two spoons of lemon juice with a lot of powdered sugar).

    PS. Eat it within a day or two (max.) - if you keep it any longer, it goes hard and dry.
