To each their own. I work 60-70hr weeks and have 6 boys at home. I love my offset and use it most every weekend. Forces me to unplug, unwind, and spend all day in the backyard with the boys. Good way to reset for the next week....and...we get to eat great food.
With 6 boys at home your wife is doing the heavy lifting dealing with the kids and home life. So you taking time off to smoke meats doesn’t change her routine of caring for them & the home while you’re “unplugged” smoking.
@IncognitoBBQ ....it actually does change her routine. I cook from Friday to Sunday, which allows her to "unplug" from having to worry about cooking for 3 nights of the week. In addition to that, I meal prep a ton of meat for her. That allows her to only have to plug the plug the sous vide in, drop the bags of meat in, and go about whatever she was doing. Also, unlike a lot of "modern" families, our boys have chores around the house. They have a rotating schedule for kitchen cleanup, dishes, trash, and keeping the living areas picked up.

This is why I own an offset and a pellet grill. I use the offset because I simply enjoy it. You seem to not enjoy doing BBQ as much as Chud or Mad Scientist BBQ do. Be focused on your kids, that's fine, but don't draw people away because you are not devoted to BBQ as others are. Be a man!
Got a good deal on a 18in WSM while I was looking to get an Offset, would absolutely recommend if you're lookin for a middle of the road situation. I've done several brisket cooks now where I just watched TV all day and had to get up less than a handful of times to adjust it. Never had to refuel it. I've even put some ribs on went to the movies and my temps were perfect while I was away. Obviously the offset makes better food but you can still make decent stuff on it.
Shouldn't you be saying something more to the effect of, "If you are a single parent with very young kids that loves real smoked BBQ, or you are lazy and don't want to manage a pit, or you want to host cookouts and brag about how good your food is but again you are too lazy to put in the time and you suck at learning new skills."

I started opposite. I got a masterbuilt 560 thought i was making good bbq ( some ok). Did one offset cook of ribs and 1000 times better. Im hooked to offset!
I used to think that, but we threw a party and had 50 people blind taste test my Kamado Joe brisket vs my offset brisket, and the vote was 25 to 25 lol, BUT I may not be very good at the offset lol, or the people judging don't know anything about bbq. But I was shocked by those results.

I think it depends on your offset as well. I only need to add more wood about every 80-90 min. That allows me time to do other things throughout the cook.

I'm smoking two briskets today, and so far I've been able to run errands, cook home made pizzas, clean the house, do laundry, and mow my lawn...all while the offset keeps the steady 250F producing amazing BBQ. It was worth the investment for me and my family.
Nothing that comes fast or easy is actually worth it in the end. I also have little ones running around and set time for my stick burners to do their work. There are times Im short on time and toss it in the pellet chamber but more often its the offset or the trailer cooker doing my cooks.
Smoking BBQ isn't for your friend. You want a fancy microwave with a smoke option. Leave it to the men, and we'll continue to make "time" to do what we do, and that's creating quality smoked bbq meats the right way that is low and slow.
Ceramic cooker? Do you mean like the Green Egg? I got suckered into buying one and it just takes up space on my patio because it takes 1.5 hours to come up to temp and you have to constantly feed it charcoal

TIME... If you don't have time then just don't do it on an offset. Getting the coals ready is a time killer in it's self let alone feeding it. Get an egg or pellet and get the same results if not better when you know how to control them.

I recommend a Masterbuilt 560 gravity feed smoker. I owned 1 for couple years now, It's an amazing machine. Set it and forget it.

Any time "time" is an issue in my humble opinion and experience..I put it in the kettle or perhaps my off set for about 3 to 4 hours then stove finish

I can attest to this. My Oklahoma joes requires constant attention every 30-45 minutes. However, it’s become my Sunday ritual.

Kamado fan here. Get the vents right and it'll hold for 12-18 hours depending on fuel and temp you choose. Love it
