Levain :
Starter - 60 grams
Whole Kamut - 20 grams
Wheat flour T80 - 40 grams
Water - 60 grams
Dough :
Whole Einkorn - 225 grams
Wheat flour T80 - 585 grams
Whole Spelt - 90 grams
Water - 720 grams
Levain - 180 grams
Salt - 22 grams
