It looks like you are using a variant on the Welsh Rarebit. The real thing would use a splash of beer or ale in the cheese sauce (which you may not care for) and is popped into the broiler to brown after being put on the toast (whcih you may care to try).
It’s strange that fish goes with cheese! I used to see people getting a fish sandwich from McD with cheese added and I was always repelled, but curious! I tried it one day and I still hated the greasy, breaded fish patty, but somehow it was more “interesting” with the cheese. One of life’s stranger taste sensations!
Maine sardines are almost unavailable (all the old canners are defunct but there seems to be a new one now), and it seems that they were juvenile herring rather than other fish like pilchards or sprats that are sold as sardines.
I really do like sardines, at least until the first burp an hour later. Try to stay away from anything carbonated when eating the little fishes. I think a raw onion, soy sauce, a few anchovies mixed in or the picante sauce would all be a nice plus up, but rarebit? Maybe a good vinegar? Anyway at least until the first burp... I really do like those little fishes, until, well you know.
Perhaps it's not to out of the norm as I really like smoked salmon, cream cheese, capers and red onion raw and caramelized mixed together and I have done this with these little fishes as well with a few dashes of liquid smoke on rye bread. Num, num...
