    I am on a fall recipe roll lately. Since sweater weather and cozy blankets get just about everyone excited, its only natural.
    You know what I love about fall more than anything else? Soup. Soup. And more soup.
    I love it so much. Its easy, filling and I can incorporate every single food group into one magical little dish. During the summer I still make soup (because the bone broth factory doesn't get shut down on 100 degree days!) but no one is ever overly excited to eat it.
    I usually knock the thermostat down a few notches on soup making day, so I don't get as many groans when I bring a piping hot stainless pot and six heavy ironstone bowls to the table.
    It all goes down a little easier with cast iron cornbread or homemade whole grain sourdough bread.
    During the fall, I have a glorious excuse to keep a perpetual pot simmering on the stove. Cold weather.
    Sure, autumn brings with it the need to pack up more than five pairs of flip flops and ten bare feet in the van for every outing, but at least I can make soup to my heart's content.
    White chicken chili is my current favorite, because I don't really have to serve anything else with it for my family to feel full.
    When I make tomato soup, or butternut squash soup, I usually have to come up with something protein-y to go with it, or my hungry gang of growing hooligans complains that they're hungry less than an hour later....or while I'm still doing the lunch dishes.
    With the chicken, beans and broth, this soup (chili, whatever you want to call it) keeps us all going until the next meal, when I pull the pot right back out to go for round two. Because why cook twice when you can cook twice as much once?!
    Why is bone broth good for you
    Bone broth is rich in minerals, calcium and magnesium, and very easy to digest. Its also a great source of amino acids. I first became aware of its incredible gut healing properties when reading the GAPs book by Dr. Natasha Campbell Mcbride.
    Since we make a lot of whole chickens, we end up with a lot of bones for bone broth. And I never let a bone go to waste without first getting all of the gut healthy gelatin out of it!
    I shared how to make bone broth in the Instant Pot in this post.
    For this recipe, I cook everything in bone broth to get more of the good stuff into my family's bodies. The white beans soak up the bone broth like little broth sponges. We end up going through almost a gallon for this one recipe. It serves our family for two meals.

    I must say, this channel has really helped change my life, even in just the short time I’ve been watching (I just recently became aware of this channel). In another video of yours, you mention Marie Kondo, and that sparked my interest in her. Since then, I purchased her books, read them, and am now adopting the KonMari method in my apartment. I can literally feel the reverberations of that decision in all aspects of my life. So, thank you for that. Also, I think these videos of yours are just plain inspiring. You seem like a very nice person with lots of calm, confident energy. You assert yourself in your home with admirable efficiency and grace. You are able to maintain all this while being a mother to five kids and a spouse (plus all the various aspects of your life that aren’t shown on this channel). I find that quite remarkable and inspiring. Look forward to exploring more great videos on your channel.

      I was going to ask about how to do this. Can you share your method? I am using chicken that is already cooked, and what I want to prepare quickly in the instant pot is the beans themselves. I've actually soaked them already too, because they were very old and I was worried they might be dry otherwise. I would be very grateful for any tips! I don't need a precise recipe, just a general guideline. 😊

    This reminds me a bit of my mom's soup :) we don't get whole chickens but we cook the drumsticks in with it :) that way the chicken falls off the bone when it's ready and the bone itself continues to add flavour. Idk my mom could probably explain it better.

    I take a whole frozen chicken from the freezer, add the trivet in my IP, add 2 cups of water (and bullion if I feel like it), pressure cook for 18 minutes. Natural release for about 10 minutes, the quick release. Chicken just falls of the bone and is ready for any shredded chicken recipe!
    If I know I am making chicken chili, I add salt, pepper, chili powder and small amount of cummin.

    Yummy! We totally ran with your idea and made this last week just the way you did except for we took a couple short cuts. We used a whole chicken that I baked in the oven and of course the bone broth, but are used frozen veggies 🌽 we also topped it with avocado, some coconut yogurt,
    And it was absolutely amazing! I wasn’t daring enough to make any corn bread but I’ve had my eyeball on it! Lol 😂 thank you so much can’t wait for the next recipe!
    I’m going to put a bird in my instant pot!!! I’ve never done it lol 😂

    I am so excited about learning to cook whole chickens. We might actually have chicken for dinner more often. I only started making your chicken drumsticks a shirt while ago. Until then, I thought chicken was kinda dry and boring. I make all kinds of different dinners and my husband says he doesn’t remember the last time he ate the same thing twice that I made... I asked him for an instant pot for Christmas, so maybe I’ll get one on Black Friday and can start making my own bone broth and chicken for dinner. My boys loved your drumsticks and they’re so excited when I make chicken now. I desperately need to get away from the complex dinners now that school is about to start up for us next week and use my slow cooker for soups and stews and just be completely SIMPLE for dinner from now on. I felt like as a stay at home mom, and the fact that we eat out every Monday, I didn’t have an excuse not to make some fancy and different all the time. But it’s a lot of planning and prepping and clean up. I think a delicious chicken with good veggies is just as delicious and thoughtful! Thanks for this! Another HIT!

      Brianne Dostaler I don’t think it was an specific recipe, though she may have one on her blog. I think it was a day in the life video and I saw her putting Italian seasoning and some garlic powder and salt and pepper and then she served it with fried potatoes and peas I think. So I looked up how long to bake chicken drumsticks and I put some barbecue sauce on ours and the kids ate it up. I’ve done that twice now and both times there’s nothing left. It just more the idea I guess, than a certain recipe.

    Hi Lisa! I have been making bone broth for many years and I've noticed that sometimes I get that wonderful gelatinous texture with the big layer of fat, and other times I just get a watery consistency. I don't do anything different each time, so is there some secret to making sure you get it to that gelatinous consistency?

      Semi Veg I also make bone broth,
      My secret to making it GeL is a lot of bones and not so much water, also the bones from a whole chicken are great for gelling, if you use things like beef bones, you might need to add in some other things along with it I use chicken feet. Personally I don’t like beef, I love chicken broth tho. So yeah a ton of bones and then just cover with water I shelves so many in the pot and press them down.

      I buy extra necks....they are so full of the cartilage good bone broth needs. I love turkey necks best. Also they are so inexpensive.

    Am I the only one that experienced the beans not cooking all the way through? I simmered the beans in broth for 3 hours and then cooked them for an hour longer with more broth... they are still somewhat dense/chewy. Could it be that I used dried pinto beans?

      Luz Posada I have never been able to fit larger than 4-4.5 pounds into my 6 quart instant pot. When I cook a 6 pounder or more it goes in my large crock pot.

    There are important reasons for presoaking dried beans. From a nutritional standpoint, you’re removing/deactivating the antinutrients in beans that inhibit protein absorption. Also, the soluble fiber in the beans is probably binding to the small amount of minerals in the bone broth, so you are likely no farther ahead, nutritionally speaking, than if you just soak and cook them in plain water. Bone broth seems to have a huge following but I encourage you to read the following post by Abby Langer: abbylangernutrition.com/diet-review-bone-broth-healer-hoax/
