@@steffenrosmus9177 not necessarily, "puttana" can mean prostitute however it's more of a vague, general, swear/slur and "puttanesca" likely just refers to the ingredients simply being "any old shit found in the cupboards" and puttanesca is, historically, a meal made from left overs and otherwise basic ingredients found in almost every kitchen.

This is a very authentic recipe, one of the best i've seen on tube. The only thing I'd recommend is to crush the olives in your hand before adding, and adding them before the tomatoes along with the capers so they sweat a little in the oil. Also, use dry pasta like in this recipe, never use fresh pasta which is highly overrated.
I like this version of puttanesca better than most I have seen because there is a greater sauce to pasta ratio. Too many recipes have an insufficient amount of sauce. I know Italian cuisine is about the pasta and it shouldn’t be overwhelmed by the sauce but I don’t think it should be underwhelmed either. I want enough sauce to know what I’m eating!

Fantastica! io prima di scolare la pasta, in una brocca prelievo una quantità sufficiente di acqua di cottura. Poi scolo la pasta nel scola pasta. Butto la pasta nella padella e poi mentre che la pasta viene mantecata, aggiungo mano mano l'acqua di cottura che mi serve per finire la cottura stessa. è un piccolo trucco che ti volevo passare. Awesome starter recipe. Food for thought. Less water and pot for pasta, water is richer in starch and great additive. Add fresh olives at the end of that's what you have. Just taste better. Olives retain their character. Canned or bottle brined definitely cook. Rosemary salt was an awesome addition. I used red pepper flakes as I had no red peppers. Worked well long as you cook em in the oil a bit.

I'd been wanting to try some simple Italian recipes, saw this and decided to give it a go. I was a bit nervous due to the anchovy fillets as I'm not a great lover of fish, and I was also unsure about capers as I'd never tried them!. Looking at the video, I was fairly confident that a tin of chopped tomatoes could be substituted for peeled tomatoes as they looked the same when you put them in the pan, but the tins I had were 400g. So I reduced the amounts for all other ingredients by roughly the same amount (a third) and went with that. What I felt personally was that the results, while very tasty, seemed to have too much pasta in relation to everything else. This was using 250g of pasta, actually slightly less than it should have been if reducing the amounts by a third (I went with 250g because the pack I had was 500g). So I definitely plan to make the dish again, but either decreasing the amount of pasta OR increasing the quantities of the other ingredients.
I would suggest (if you are new to italian cooking) that you make sure that you season the water correctly. Look up the correct amounts. Before i did this, i woudl have to drench the pasta in sauce. After i seasoned properly the pasta became an ingredient, not just a vessel for the sauce. Otherwise, to your liking is always best!

Siento que hagas alguna receta que no dominas trata de ir anotando las cantidades así podrás quitar o aumentar las cantidades hasta buscar tu receta perfecta.... Y los productos enlatados son buenos pero a veces si saben un poco a fermentados o muy ácidos por el tiempo que están procesandos.... pero mientras te vas acostumbrando a picar ....son buenas opciones.... Saludos.
A little tip: Do not use salt to cook the noodles because olives and anchovies are already very salty. Instead, add a little cooking water to the sauce and finish cooking the noodles in the covered pan. A teaspoon of sugar also helps to take the acidity out of the tomatoes.
