Hallo Ivan, what a wonderful recipe again. I will try it when the weather gets colder. It's easy and the veggies are at normal price in the winter. I must compliment you on that; you choose veggies that are easy to find. At this moment I myself am experimenting with chinese ingredients because I have to go to the big city of Clermont Ferrand every 2 weeks to get adjusted by my chiro-crack-tor🙂. And since I need to walk after the treatment before I jump back into my car I do some 'investigation' in a small and a bigger chinese supermarket. The next time I do my shoppings before my treatment and afterwards do some window shopping to see if they have some taste for fashion over there. Needless to say that there is a constant stream of chinese and japanese products into my kitchen. Big fun to experiment with. Today I have bought Phillipine vinegar from fermented palm juice that is spiced up with onion, garlic and pepper. I am looking for recipes to try this thingy!!!!! Also after a long time I found bean sprouts and real tofu! Jujubes, straw mushrooms in can etc. etc.. It is nice to be back in your kitchen, though, good food for the soul, warm music for the heart and a nice atmosphere to just feel good. Bye!

Many vegetables also go down in price during these months here as well, so it’s kind of a win-win situation 😂 Sounds like you’re having fun in the kitchen, those ingredients sound really interesting. I never heard of vinegar made from fermented palm juice before, that would be fun to try. Would also love to hear what you like to make with tofu, it’s been a while since I cooked with it. By the way, I also recently went to some new food stores while travelling last week, but I didn’t find what I was looking for (I had heard they had good jackfruit). Maybe I have better luck next time. 😂

Here are the ingredients and amounts: • 1 kg beetroot • 1 onion • 2 carrots • 2 potatoes • 3 garlic cloves • 3-4 sprigs of dill • 200-300 g white beans • 1 tbsp white wine vinegar • 1 - 1 ½ liters of chicken/beef/vegetable stock (don’t put too much at first, you can always add more when blending the soup to make it as thick as you like) • 2 tbsp olive oil • 15 g butter • 3 tbsp ghee (1 tbsp in the soup, 2 tbsp for topping) • 1 tsp red chili flakes (optional) • Black pepper (to taste) • Salt (to taste) • Serve with some bread and crème fraiche or Greek/Turkish yoghurt I hope you enjoy it, would love to hear how it turns out!
