  • A must in the Hyderabadi cuisine, Burani Raita is so simple to prepare and tastes best with spicy biryanis.
    BURANI RAITA
    Ingredients
    5-6 garlic cloves
    1 cup yogurt
    3 tbsps oil
    ½ tsp black salt
    Salt to taste
    ½ tsp red chilli powder
    Method
    1. Peel the garlic cloves, smash them using the back of a knife and finely chop them.
    2. Heat oil in a non-stick pan, add the chopped garlic and sauté till golden brown. Take the pan off the heat. Strain through a strainer into a bowl.
    3. Take yogurt in another bowl, add black salt, salt, red chilli powder and add ¾ of the fried garlic and mix well.
    4. Transfer into a serving bowl, garnish with the remaining fried garlic and serve.
