Party crowd pleaser- Sheet Pan Quesadilla Recipe!

This sheet pan quesadilla is the BEST quesadilla recipe! Filled with a protein of your choice and a variety of delicious peppers, beans and zesty cheese, this quesadilla recipe is PERFECT for feeding a crowd on game day, Halloween parties or even just busy weeknights when you have a time crunch and a family to feed!
The Recipe- Sheet Pan Quesadilla
2 tbsp EVOO
2 Bell Peppers Diced
Jalapeño pepper - diced and amount to taste
4 Scallions - chopped (just the white part)
3 cloves Garlic- minced
2 tsp Chili Powder
1 tsp ground Cumin
Salt and Pepper to taste
3 cups Shredded Chicken (or beef)
1 can Pinto Beans
1 can Black Beans
1/2 cup Salsa of choice
9-10 Tortillas - burrito size
4 cups shredded cheese of choice
Sauté veggies in EVOO for about 4-5 minutes until tender.
Add garlic and spices and sauté another minute.
Remove from heat.
Mix in chicken, beans and salsa.
Lay out all tortillas on a sheet pan with the edges hanging off the sides (review video to see how to do this).
Spoon filling into the tortilla “envelope”.
Seal the filling with the remain tortillas.
Brush lightly with EVOO.
Cover with the back of a second sheet pan.
Bake at 425 degrees for 20 minutes covered and 5 minutes uncovered.
