    [RECIPE]
    Ingredients
    500g pork shank(or pork tenderloin), blood withdrawn
    3C(600ml) water, for blanching
    1/4C soju
    1t salt
    6C(1.2L) water
    15g dried radish
    10 shishito pepper
    black peppercorns t.t
    flavoring ingredients) garlic 4cloves, ginger t.t, leek 1/2sprig, kelp(5x5cm) 2pieces
    braising sauce)soy sauce 3/4C, rice wine 2T, brown sugar 2T
    Preparation
    1. In a pot, pour 3cups of water, salt and soju; then blanch the pork for 2minutes and rinse;reserve.
    2. In another pot, pour water and add the flavoring ingredients; place the pork and cook for 20 minutes;discard the flavoring ingredients.
    3. In a pot, place the braising sauce and shishito pepper to cook for another 5 minutes; then add dried radish and cook for 5minutes. Add the black peppercorns.
    4. Slice the braised pork and serve with the sauce.
