Written recipe Ingredients: Milk: 100 ml Matcha powder: 20 gr sifted Sweet condensed milk: 240gr Whipping cream: 400 ml Heat up milk on medium. Remove the milk before boiling and pour into the sifted matcha powder. Give a little stir until both mixture combined. Add sweet condensed milk to the mixture and stir once more. Strain the matcha and milk mixture until nice and smooth. Now whip the cream on separate bowl until stiff. Add in the matcha and milk mixture. Mix again. Freeze for 3 hours, take it out and mix again for 3 minutes. Put it back to the freezer for another 2 hours. Take it out and mix again for another 3 minutes. Put it back to the freezer again for 2 hours. Matcha ice cream is ready to be served :) Just helping because i need the written recipe as well 😂

Everyone”s asking why beat the cream mixture twice? I believe the reason is trying to mimic an ice cream maker. When freezing a liquid to a solid large ice crystals will form. So to ensure you get a creamy and smooth final product you would beat ( hence break) the ice crystals up. An ice cream maker does that with continuous churning.. So with no maker you have to help break the crystals with one extra beating. I made a batch using the prescribed method and will make next batch using my ice cream maker and compare the difference.

YES! finally I see someone who does the same thing I do when using a mixer!! After so long though I just started letting it get almost to the point of freezing completely then I break it up with a spoon and mix it vigorously with a wide wooden spoon. (As long as there are no lumps, in the end it's the same result without using an electric appliance 👍) then I just refreeze the whole thing
Well, i've made this last Saturday. Because i just only had around 10g of matcha powder, so i divided half of your recipe, result went not very ok because the whippin, i made 200ml of whippin cream, it tasted creamy more than matcha flavor, so i think next time i will be doing with 20g of matcha powder and 150ml whippin cream :D. It could be the matcha grades are different so the flavours or amounts needed end up varying. Matcha has various grades, if you wonder what I mean, for example, costco matcha is nowhere near matcha at tea shop.
I made these but substituted the whipping cream for coconut cream. The ice cream turned icy but I guess that was on me. I’ll try this recipe again with whipped cream next time.

I have tried the recipe with reduced condensed milk (200g). Still a bit sweet for my preference. I will try reduce to 160g next time. But overall it is a great receipe. Hello I am doing this now, I also added a bit of fresh pineapple juice (maybe a 80-100ml? didn't measured.) so I used 500ml whipped cream. My freezer has - 18°C in a metal bowl, after 30 min (I was curious..) the top was frozen so I whipped up again to break the ice. I will check after another 60min Edit: actually 90 mins then mixed, another 60min then mixed, at 3 a.m. and I left it in the freezer for hoirs, turned out great!

You can stir once before it gets harden. Without milk the ice cream may be too sweet, the milk also helps to blends the matcha powder well. You can try and let me know how it turn out :) Have a nice day.
Had matcha powder to use so decided to make ice cream. I doubled the matcha powder and it is definitely more matcha than Haagen Daz”’s version but I would triple it next time as it is still not to the matcha level I tasted in Asia. Thanks for the recipe. maybe you can skip the hours in freezer by putting a bowl full of ice cubes and on the top of that the bowl of icecream mixture, then mix it until the texture is just right/set and let it be in the freezer.

I just rest the mixture in the fridge for 6 hours and its ready to eat ))totally because im lazy to mix it HAHA and u dun rly need to make it stiff i dun have a machine so a use a mixer , on the first time i didn't make it stiff and it still taste good 🙆🏻♀️ the second time i mixed it to stiff using my own hands and it taste better than the first time !!! You couldn't get a proper ice cream consistence that way. It would crystallise and harden too much (tried it in the past and it was a total fail).
