Some of those beams looks good, you could also reuse them for some other projects, like barn etc. If you reuse whatever you can and put down numbers later to compare how much you would spend if you just bought everything new. Of course if things are rotten they have to be replaced, but often all they need is a good cleaning. You seem to be intelligent, hardworking, funny young couple. You're doing great💕

If you have a sawmill in the area that can produce nice timbers for you at a reasonable price - this would be a beautiful space to have an open timber ceiling. The big issue with the clay tiles is their weight. The timbers and purlins have to be pretty massive to carry the load and not sag over time. I don't think you'd want to pay the price of these timbers at Brico 😊 Once you have the rafters up you can clad the ceiling (on top of the beams) with ship lap or tongue and groove planks that you have prefinished on the ground (paint, stain, options unlimited - I favor white.) so you don't have to try to finish all that wood overhead. Then your insulation panels go down and so on. 😊 It is a beautiful wide open space. I'm certain you can do something creative with the fireplace, too.

Suggest you contact 'life by living' as they are just ahead of you on stone building reconstruction. Otherwise love your hard work and determination.

I could see your wee Irish mussels up in sixth gear,, fair whacking that Thousand year old Bram,, that Bee storied fairly did the job,, great work both of you,,it will make a great difference to your kitchen,,,I cleaned black suit off my drive with bleech it cleaned up nicely,any that falls on the floor you can scrub up, make shure to put on a vapour barrier winters can get very damp 🎉 💨
The channel “Living in the Algarve” has been working on their roof. You might something useful there. It seems almost everyone coming to these old places in Portugal have to do their roofs.
Good work! do you plan to have the same height of the roof as the old one or are you going to raise the roof a little? Saw on the newer house (on the wall) that there was a marking of a roof that has been there at some point in time.
It would be good to match the original roof height as shown on the rendered wall. The lowered roof creates two areas that are impossible to waterproof.

One thing I forgot to mention is the traditional masonry at the eves and gable end is typically some type of two or three brick corbel (unless you have a good overhand at the eves. A corbel can add a real touch of class and also is a great way to level out the tops of the limestone boulders. One other structural detail that is common in Portugal is a ring beam on top of the granite to tie everything together. Also, here is a link to a couple that used open beams, roof top insulation and recycled tiles. He can help you with absolutely anything. Cindy Vine Portugal have a cure for whasp stings. It is a copper or brownish colour small change you use to put on the sting and wrap it on the sting. It will helps with the itch and prevents swelling. With a lot of love. Granny South Africa.
Be careful with those wasp stings. You are definitely having an allergic reaction. Wasps are very dirty stingers, so be on the look out for red rings on your arm which is cellulitis and you need antibiotics for it. Ask me how i know. Also be sure youre up to date with tetanus shots too.
Muriatic Acid is what you need to clean the granite up, should be available from a builders merchant... Good luck with it all!

With the roof off you can really see how dark the smoke has made it. A good clean will hopefully sort it.👍

Hopefully you guys are using lime to build and fill in the gaps in the stone. Cement/Mortar don't let out moisture. It traps moisture. 😮
