they were testing different kinds of bean prep (soaking) . You can find the type you prefer by looking at 3:43 based on softness of the beans. The softer the bean during pre soak, the less time it will take for the regular cooking.

I've been trying to figure out how to pressure cook beans in my Instant Pot so that they are still firm enough to use in a salad or combine in a recipe that is cooked further. From what I see, it looks as if 4 minutes Quick Release is the way to go for me. Thanks again.
I also like this video for its presentation with the same type of beans prepared differently. As with most cooking, it is mostly in the technique. I'm going to try to cook a lot of bean types - particularly chick peas for making hummus.
I swear, my steel pressure cooker is faster than these Instant Pots. My Presto seems to reach pressure in about 6 minutes compared to these Instant Pots. Either way, pressuring is the way to go for great food.
Which method produces beans similar to overnight soaking? Some of these look hard and some are squishy.

As you've probably discovered by now, these instructions are only for pre-soaking. 4 minutes with QR will not cook your beans enough for a salad.

What is the purpose of the different steps. Why not soak for 8 hours then cook
Sometimes people cook spontaneously. They don't always know they are cooking beans 8 hours before hand.
