    So when u put the dough in the strainer did u put it over boiling water with the lid off until it proofed❓️

      Hi! After they proofed for the second time, I transferred the bagels to a pot of boiler water for about 4 minutes (using the strainer to transfer). Then I placed the boiled bagels on a sheet pan and baked them until golden. You can find more in depth instructions at the link above!
