That food looked so awesome, and especially the fried noodles with the ramen broth pooled in and also the fried rice. So good and the dedication for this stall, and the lines you see in the end, most people could not do this. The hours are super crazy.
This Yatai owner just by watching video he is very conscience towards customer service and every dish prepared looks good because he's thoughtful towards others.

Fried noodles, rice etc can be very tasty straight from the pan on the plate. Omelette with mentaiko very skillfully done. We lived in Nakasu for years and mostly went to the yatais along the canal or the few on Showa-Dori, plus our usual yakitoris and korean places. Some yatais beside the canal towards Canal City make amazing seafood, big shells etc. And they all have cold beer. As a visitor do not worry, there are public toilettes close by and they are just as clean as in a Sheraton. Also, do not fear Nakasu, on the Internet it is called a red light district, wrong. There are a lot of girls and boys bars, but it is perfectly safe and clean 24 h. I admire the young mayor of Fukuoka who supports the yatais, providing electricity and water, understanding that these places are popular with both locals and visitors. I once said hello to him, a nice guy. Arigato!
I'm happy to see how music travels the world. At minutes 13:17 the young men mention how they heard about Fukuoka, I'm from Dominican Republic so is the author (Juan Luis Guerra) of that song call Bachata en Fukuoka.
I'm that man in that video haha. It truly is amazing. The song is what brought me there on the extra days I had to spare from my trip. What made it even better was listening to it walking through the city with my airpods on.
I will say this Fukuoka is beginning to the New City For Me!! I'm becoming quite Smitten with the Yatai and the Food!! Here in the states we don't have Food Stall so their's no Real Way of getting this Overall Experience!! Recently i watch a lot of yatai.. but this guys have the best cooking skill.. that cooking licences it not for a show lol... The food quantity also very generous.. im really dont understand why he said the profit doest worth it..
The brown one is okonomiyaki sauce I believe, which is made of vegetables, sugar, soy sauce, vinegar and other ingredients (you can kind of imitate the taste by mixing ketchup, worcestershire sauce, soy sauce and sugar), and the other one is mayonnaise!

Yes! They put up the stall in the evening, clean up and dissemble the stall after business finishes (around 1am) and then put it up again the next day in the evening!

12月に福岡に行きほとんど屋台が出てなかったので諦めかけた所、やっていた屋台がここでした。ここで食べた博多ラーメンは忘れられません。6品目食べてお酒も呑んで5000円行かずリーズナブルでした。
九州ってほんと食べ物がサイコーですよ。特に福岡と熊本、。でも鹿児島も凄い。
