Also when I’ve introduced cream and the vanilla pod I bring the cream sugar and vanilla bean to the boil then I reduce the heat and simmer for 10 minutes then I remove from heat and let it come to room temp before introducing the egg yolks

Ha, I have a batch of pumpkin crème brûlée in the oven right now (using your pumpkin spice) and here comes Aya. I swear sometimes I think she can read my mind. Your ratios look a lot like how I prefer. I like a little milk in crème brûlée like you have here so it doesn’t taste so fatty once cold. I also prefer wide ramekins so you get more caramel. Great tip about the blowtorch to get rid of bubbles!

My pleasure 😊 Custard pudding is made by pouring caramel on the bottom of pans/ramekins and custard filling on top of it. Creme brûlée has higher content of heavy cream and yolks, so it’s more rich and add crunchy caramel in the very end by torching the sugar on top!
When I make my crème brûlée I use 500ml pure cream and when I’m ready to bake them I just use a boiled kettle that has been sitting for 5 mins to 6 mins and I put the tray into the oven and then I pour in the boiled water easier than the other way round

I like using raw sugar as it makes for a nicer presentation. Brown sugar is a nice twist too. Cheers.

hey aya was checking for recipies of lemon curd i see some use cornstarch but in ur recipe u didn't .what s the effect ?
Cornstarch helps to thicken liquids but you don't need it when enough eggs are added! Eggs and butter(mainly eggs) does the job to thicken the curd.
