Hello Aya, your chocolate madeleine recipe is amazing! My madeleines came out very fluffy and yummy. However, I can’t achieve the hump… 😢 I used a silicone madeleine mold. Is there any secret to achieving the hump? The hump makes the madeleines look so cute 😍😃

Was it a couverture chocolate? Non couverture chocolate gets thick very easily during the tempering process. Or it also happens when any liquid goes in or the chocolate is overheated.

Hey Aya, quick question! I noticed that your madeleine recipes are different than most others who call for genoise-base batter, where eggs are whipped to max volume. Is there a reason for that? Love your recipes btw, and congrats on the newborn baby ❤
I’m not baker, just baking for my family... but as far as I learned from my experience whisking eggs for madeleines is waste of efforts, because you’ll have to bake it as soon as you mix everything together because air bubbles starting deflated once you add flower, and especially butter/oils, not to mention letting rest in the fridge for long time
I'm curious to know how it works out! I've never tried it but it should work ok as long as it is a non-stick pan. And adjust the baking time, I am guessing it'll get baked faster, if it's about the same size.
