  • Hello everyone! Thanks for tuning in, in this video I would like to share our authentic Armenian recipe that has been known for centuries, this dish brings back so many childhood memories as I use to help my mom when I was little to make Lahmajun , my job was to add the meat mixture on top. This is so delicious as many calls it Armenian Pizza can be served as main dish or as side dish, you can eat it for breakfast, lunch or dinner! It is so good that you can eat it any time of the day, it’s also good for picnic, The secret of perfect Lahmajun is to open a very thin dough so it can have a very delicious crust on the edge and soft in the middle so it can be rolled up to eat with some fresh parsley, tomatoes and fresh squeezed lemon juice over it.     For this you need
    1.5 pound ground beef 93% lean
    5 large or medium tomatoes
    2 large size onion
    2 bunches parsley
    4 cloves of garlic
    1 green bell pepper
    1 red bell pepper
    2 tablespoons tomato paste
    2 tablespoon pepper paste
    2 tablespoons salt
    1 tablespoons black pepper
    1 teaspoon paprika
    1 teaspoon chili powder
    1/4 teaspoon cayenne pepper
    2 teaspoons olive oil
    for the dough you need
    6 cups all purpose flour ( make sure you have extra flour to roll the dough)
    1 teaspoon salt
    1 teaspoon sugar
    1/2 a teaspoon yeast
    3 cups warm water

    This is the only lahmacun recipe that is clear and direct. I made it and my hubby loved it. Thank you
    Personal adjustments; add pomegranate molasses, chilli powder and paprika will taste perfect when you squeeze the lemon on top afterwards also for the salad red onions with sumac and parsley come in perfect.

    Been missing Lahmajun for 30+ years, since I left NY. Made these yesterday. Even better than my best friend's grandmother made (sorry, Mrs. Kilarjian, wherever you are!). Thank you so much! One gripe; however, no one should look as elegant and poised as you do while slaving away in a hot kitchen!

    Great recipe. It’s ironic that a Norwegian-American like myself will say that when I was in Istanbul couple of years ago, my Turkish friend’s dad who was a highly educated man explained to me how so many Turkish dishes are actually from Syria, Lebanon, Palestine, Egypt or Greece. The ‘lahmajeen’ isn’t Armenian or Turkish. I was told it means nothing in their languages since ‘lahm’ is Arabic for meat and ‘ajeen’ means dough or baked’.

      in arab they often call it armenian bread if i remember correctly, just because we don't have these words doesn't mean dish isn't ours. there are lots of arm dialects with loan words from different languages

    This was an excellent video and your explanation is great. You have a soft pleasant voice. The dough is nice and soft. I especially like the idea of cutting out circles rather than make individual balls (goons). Brava! I subscribed and look forward to other videos. Anxious to make your Nazook.       I have tried this dish in three different countries Syria Lebanon and Armenia in my last visit,I can totally recommend the Armenian one because in my opinion it was the best one I have ever tried 🌺

    Always bless the dough with the cross, I bake mine on pizza stone, makes the bottom slightly crispier. Loved your presentation. Wish you use grams for your dough recipes, cause 3 cups of water (240 x 3 = 720g) to 6 cups of flower (120 x 6 =720g) is 100% hydration, the dough will end up like a paste, very liquidy. 65% to 70% hydration is ideal.

      Thank you dear for commenting, yes I always bless the dough, something I learned from my mom since I was little ❤️ and regarding using measurements it’s best for all audiences to use measuring cups since it’s available in almost all households! for the dough texture it should be a little on the soft/sticky side because later on we’re going to roll the dough with lots of flour which will be equivalent to an ideal hydration.       At 14:30 she will say to put it on the bottom rack until the dough changes colour. Then you remove from bottom rack, and put at top for 5 minutes.

    Hi, just finished making 1/2 a batch. Tasted great. Thanks for posting the the recipe. My mixture was on the watery side. I had to drain off the excess. Can I use canned tomato sauce instead of whole tomatoes. It's hard to find good tomatoes now. Also did you grease the pan. I used parchment paper which burned a little and set off my smoke detectors. Getting my recipes from Treasured Armenian Recipes Cookbook and sites like yours. Last week I made Meat Dolma successfully. In a few weeks I will try to make Harpoot Kufta. That should be a challenge. Like a fool I only watched my mom and dad make these dishes a few times. Sadly now they gone and I now see the time and effort they put into it. Thanks again for all your work.....

    Thank you, and this is exactly the way lahmajoun should be made. Thank you for sharing this delicious Armenian dish. Unfortunately I don’t know how to write the Armenian name of it in English because they don’t have the Armenian letters. But I know it from my grandmother, and great grandmother who told me some of the original names of some Armenian dishes that was forcefully changed by the Turks and was forgotten through many years of domination. Just like in United states we call it Armenian pizza because it looks like pizza, but years latter it will be known as Armenian pizza. Lately I noticed even that the Turkish people stole it they start calling it Turkish pizza 🤣🤣🤣🤣

      Thank you so much for your explanation about how far Lahmajon comes from, lots of things has been forced to be change and taken away by force from Armenians and history proves it. They can take everything away but the Can Not take Armenians faith away and no matter where we are we come together and build Armenian ❤️💙🧡

      Believe me this is not lahmacun it's not Armenian dish and Armenians don't know how to make it properly and this is the wrong cooking style. Just search on RUclips "Gaziantep lahmacun' for the exact one. Even chopping method of veggies are wrong here.

      Hello and welcome 🤗 and thank you so much for connecting with us, I’m so happy to hear that you’re going to make lahmajon it is delicious and to answer your question it is the best to bake it then freeze it and when ever you need it you can just take it out of the freezer and put it in a toaster oven and warm it up and it will be as if you just made it. this recipe makes about 28-30 pieces it depends on the size that you make. As a child, when visiting many Armenian homes with my parents, food was always served and a denial to eat was considered to be an insult, Breaking bread with a person was a symbol of respect, acceptance, peace and love.

      This is not an Armenian dish. This is a big mistake! This Assyrian dish! Lahmo or Lahma is translated from Assyrian as bread and meat as Jow as anointed with meat.

    I like to share a little history about this dish. The name Lahmajun was given to this recipe by the Armenian merchants who wanted it to get popular in Syria and Lebanon and to make it easier to pronounce among the Arabic people. The original name is mesov. losh. Meaning meat spread on a lavash or a thin bread. This is just one of many ancient Armenian recipes. Today it became very popular in America, and to make it more popular among the American people the Armenian bakeries are calling it Armenian pizza. It’s a very delicious snack. You can eat it with Armenian salad, Armenian Yogurt drink. “Madtsoun drink”.

    Hi Nora, nice video about one of my very favorite Armenian dish, but in my family (in France) there was never any garlic or chilli pepper added to the meat, as I see some here & in other videos about Lachmajun...I also tried some at an Armenian friend & I was concerned about the difference of taste & didn"t really enjoy the experience kinda losing some of the meat taste interest. But it was one time only with that recipe. I wonder, as I'm not a cooker, has the garlic ever been in the recipe as far as you know or hasn't been added to it lately ? Also, I wonder, as my father (RIP) who use to cook this dish, was Armenian, but born in Lebanon, so maybe this was the reason he never added garlic to it ? What's your thoughts about that, please..Thanks in advance & well done for the video...Parev, from Paris !

      Hi Greg, I learned my recipe from my grandmother that was one of genocide survivors, that migrated to Beyrouth and then to Armenia. Garlic was one of the indgrdients in the recipe. It adds lots of flavor and good aroma. Just don't use too much. Use only 2 cloves instead of 4 and it will be mild and pleasant. One of my favorite Armenian dish. In Armenian it is msalosh.

      Vous pouvez acheter le pain ..ça s’appelle Lavash,,au Super C,,, sont en forme carré au lieu de rond…mais aussi bon…😊😊

      @@katherinemooney4396I think the best think would be to put inside lahmajun is salad made out of cabbage, chops the cabbage like cal slaw and ad lemon and little of olive oil pinch of salt let it sit for couple of hours. Then just add it to the lahmajun and wrap it and eat it.

    Lahmacun is neither Armenian nor Turkish. Although it is mostly eaten in Anatolia, it is actually Arabic. Already etymologically "LAHM means meat in Arabic, MAjUN/MACUN means paste in Arabic."
    but who cares ? I can eat it every day as a Türk :)
